Mushroom masala is a simple and creamy mushroom curry made with whole spices, onions, mushrooms, ginger, garlic, spice powders and yogurt. This dish can be made in less than 30 minutes which makes it a perfect side dish for roti. 

Mushroom masala recipe 

My family love mushrooms, I buy them every week and make different dishes every-time. Some of my favourite dishes is this mushroom toast, mushroom omelette and mushroom butter masala.

This masala mushroom is our current favorite. This curry doesn’t have tomatoes instead I used yogurt (curd) for tangy and creamy taste and texture. So try this and let me know how it turns out. 

About Mushroom Masala 

Mushroom masala also known as Kalan masala or masala mushrooms. This is made with basic ingredients like onion, ginger, garlic, chillies, whole spices, spice powders, mushrooms and yogurt. This curry comes together in less than 30 minutes. 

This recipe is easily customisable. You can use any mushrooms of choice. I used button mushrooms, but you can use any variety of mushrooms like oyster mushrooms or milk mushrooms. meanwhile check my oyster mushroom curry. 

Mushroom masala cooks down to a thick curry, you can use this to serve as a side with roti, chapati, naan or pulao. You can use them to stuff between bread slices to make mushroom masala sandwich.

I used yogurt in this recipe instead of tomatoes. If you are low in tomatoes, you can use yogurt to add extra protein and creamy tangy texture to the masala. 

One issue many of us face is yogurt splitting in the curry. You can prevent that if you follow these steps. Always use thick not too sour yogurt. Whisk thick yogurt until creamy before adding into the masala. 

Most important step is to reduce the heat to low before adding yogurt, this helps to prevent splitting. Another tip is to add some kind of nut powder into the curd. I like to blend curd with cashews which make a creamy sauce this prevents splitting when added to hot mushroom and onion mixture. 

Ingredients 

  • Onions – I used large onions which I sliced thinly. You can chop them into fine dice. 
  • Mushrooms – I used button mushrooms for this masala. You can use shittake mushrooms, milk mushrooms or oyster mushrooms. 
  • Ginger garlic paste – you can either chop them fine or use puree. 
  • Green chillies – adjust to your taste. You can even leave it. 
  • Whole spices and tempering – cinnamon, cardamom, dry red chillies and curry leaves is used as tempering. This flavours the oil. 
  • Spice powders – I used chilli powder, coriander powder, garam masala powder and turmeric for flavouring. 
  • Yogurt – use thick creamy plain natural yogurt for the masala. Make sure the yogurt is not too sour. 
  • Oil – i used peanut oil for this curry. You can use ghee, sunflower oil too. 
  • Coriander leaves – fresh coriander adds aroma and flavour. 

Step by Step Pictures

Yogurt mix

1)Mix yogurt with chilli powder, coriander powder and garam masala powder in a bowl and mix well.

2)Mix well until creamy and smooth.

3)Heat oil in a pan. Add in cardamom, cinnamon, dry red chillies and curry leaves and let them sizzle for a minute.

4)Add in sliced onions and cook till translucent.

5)Add in green chillies, turmeric powder, ginger garlic paste.

6)stir for couple of minutes until aromatic.

7)Now add in mushrooms. Mix well with the onions.

8)Cook this for 3 minutes until mushrooms is wilted slightly. Sprinkle salt to taste.

9)Now reduce the heat to low and add in the yogurt mixture.

10)mix well with mushrooms.

11)Now cover the pan with lid and cook for 8 to 10 minutes on medium heat until oil separates from it.

12)The mixture will get thick and you will see a layer of oil floating on top.

13)Now add in coriander leaves and mix well.

14)Serve hot with roti.

15)Enjoy.

Expert Tips

Mushrooms – I used button mushrooms, but you can use any variety of mushrooms like oyster mushrooms or milk mushrooms. 

Yogurt – you can use slightly sour thick curd for this recipe. Mix yogurt with spice powders till creamy before adding into the mushrooms. 

Add ons – along with mushrooms, you can add peppers, or vegetables that you prefer. You can add steamed potatoes, cauliflower also. 

Serving – you can enjoy mushroom masala  with hot rice, chapati, ragi roti or pulao. 

Storage – leftover mushroom masala can be stored in fridge upto 3 to 4 days. Reheat in microwave until hot and serve.

Q: which mushroom is best for this dish?

You can use button mushrooms, oyster mushrooms or shiitake mushrooms. 

Q: My yogurt split when I add into the masala, what can I do to prevent it?

Whisk thick curd until creamy before adding into the masala. Reduce the heat to low before adding curd. Another tip is to blend curd with cashews which prevents splitting. 

Q: what other vegetables can I add into this masala? 

You can add capsicum, steamed potatoes, cauliflower into the curry.
