Iced Pumpkin Spice Latte (Easy 5-Minute Recipe)

This iced pumpkin spice latte is a creamy, coffee-shop-style fall drink made with espresso, real pumpkin puree, maple syrup, pumpkin pie spice, and your choice of milk. It takes just 5 minutes to make, and you can easily adjust the sweetness or use non-dairy milk.

You do not need an espresso machine, either. Strong brewed coffee, instant espresso, or cold brew all work, so you can make this homemade pumpkin spice iced latte with the coffee you already enjoy.

How do you make an iced pumpkin spice latte?

Mix espresso or strong coffee with pumpkin puree, maple syrup, vanilla, pumpkin pie spice, and a pinch of salt. Froth the milk separately, pour the pumpkin-coffee mixture over ice, and add the milk. Top with whipped cream and more pumpkin pie spice if desired.

Why You’ll Love This Iced Pumpkin Spice Latte

  • Pumpkin Spice Season is Here! I like a pumpkin spice latte in March just as much as I like one in September, but we all know that iced pumpkin spice lattes are the must-have drink of the Fall season.
  • Prefer your pumpkin spice latte hot? Try my vegan pumpkin spice latte for a warm and cozy version.
  • Ready in 5 minutes. Once the coffee is prepared, the entire drink comes together in one glass in just a few minutes.
  • Made with real pumpkin. One tablespoon of pumpkin puree gives the latte genuine pumpkin flavor and helps create its creamy texture.
  • Easy to customize. Choose dairy or non-dairy milk, use espresso or strong coffee, and add more maple syrup if you prefer a sweeter drink.
  • No espresso machine required. Instant espresso, strongly brewed coffee, or cold brew can replace freshly brewed espresso.
  • Simple to prep ahead. Make a batch of homemade Pumpkin Syrup and keep it refrigerated for quicker lattes throughout the week.
  • Adjustable sweetness. This iced latte is moderately sweet with one tablespoon of maple syrup. Taste it before serving, then add more maple syrup if you prefer a sweeter drink.

Ingredients for an Iced Pumpkin Spice Latte

Espresso or strong brewed coffee: Two shots of espresso provide the boldest coffee flavor. If you do not have an espresso machine, use instant espresso, strongly brewed coffee, or cold brew.

Pumpkin puree: Use plain, unsweetened pumpkin puree—not pumpkin pie filling. Pumpkin pie filling already contains added sugar and spices.

Maple syrup: A liquid sweetener blends into a cold drink more easily than granulated sugar. Start with one tablespoon, then add more to taste.

Vanilla extract: Vanilla softens the stronger notes of the coffee and spices.

Pumpkin pie spice: This blend adds the familiar warm fall flavor. A small amount is enough for one latte.

Salt: A pinch balances the sweetness and brings the flavors together.

Milk: Dairy milk and non-dairy milk both work. Oat milk is a good choice when you want a creamy dairy-free latte that froths well.

Ice and whipped cream: Fill the glass with ice before adding the latte. Whipped cream is optional; use a dairy-free version if needed.

How to Make an Iced Pumpkin Spice Latte

  1. Mix the coffee base. Add the espresso, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, and salt to a mug or jar. Froth or shake until thoroughly combined.
  2. Froth the milk. Froth the milk in a separate mug or jar until foamy.
  3. Fill the glass. Add ice to a large glass, then pour the pumpkin-coffee mixture over it.
  4. Finish the latte. Pour in the frothed milk. Add whipped cream and a sprinkle of pumpkin pie spice, if desired, and serve immediately.

Tips for the Best Pumpkin Spice Iced Latte

Let hot espresso cool briefly. Pouring very hot espresso directly over ice melts the ice faster and can water down the drink. Mix the espresso with the pumpkin and other flavorings first, then let it sit for a minute before pouring.

Blend the pumpkin mixture well. Pumpkin puree and ground spices can settle, so froth or shake the mixture until it looks smooth before adding it to the glass.

Use enough coffee flavor. Regular-strength coffee may taste weak after you add milk and ice. Brew it stronger than usual if you are not using espresso.

Sweeten before adding ice. Maple syrup blends easily, but it mixes most evenly when you combine it with the coffee and pumpkin before chilling the drink.

Make it dairy-free or vegan. Use your favorite non-dairy milk and dairy-free whipped topping. Maple syrup keeps the latte vegan; honey does not.

Prepare several servings at once. Double or triple the pumpkin-coffee mixture and refrigerate it in a sealed jar. Shake well before using, then add milk and ice to each glass when serving.

Iced Pumpkin Spice Latte FAQs

Why Is My Iced Pumpkin Spice Latte Watery or Gritty?

A watery latte usually comes from hot coffee melting too much ice or from coffee that was brewed too weak. Use espresso or strong coffee, and let it cool briefly before pouring it over a full glass of ice. A gritty or separated latte usually needs more mixing. Froth or shake the coffee, pumpkin puree, maple syrup, vanilla, spice, and salt until smooth. Because this recipe uses real pumpkin and ground spices, some natural settling is normal; stir the drink again as needed.

Can I make an iced pumpkin spice latte without an espresso machine?

Yes. Replace the two espresso shots with about 2 ounces of instant espresso, strongly brewed coffee, or cold brew concentrate. A bold coffee base helps the flavor stand up to the milk and ice.

Can I make this latte dairy-free or vegan?

Yes. Use a non-dairy milk such as oat milk and choose dairy-free whipped topping or leave it off. For a vegan latte, use maple syrup or simple syrup instead of honey.

Can I use pumpkin pie filling instead of pumpkin puree?

No. Use plain, unsweetened pumpkin puree. Pumpkin pie filling contains added sweeteners and spices, which can make the latte too sweet and change its flavor.

Can I make it ahead of time?

Yes. Mix the espresso or coffee, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, and salt, then refrigerate the mixture in a sealed container. Shake or stir it well before pouring it over ice and adding freshly frothed milk. For an even quicker option, prepare homemade Pumpkin Syrup in advance.

How do I make a larger batch?

Double or triple every ingredient in the recipe. Combine the coffee mixture in a larger jar or pitcher, refrigerate it, and shake or stir before serving. Add the milk and ice to each glass just before serving so the drinks do not become diluted.

Can I serve this pumpkin spice latte hot?

For a hot version, use the Vegan Pumpkin Spice Latte recipe. It is designed to be served warm and includes instructions for creating a creamy, cozy drink.

Notes

  • Two shots of espresso are about 2 ounces. If you don’t have an espresso maker, you can also make espresso with instant espresso mixed with hot water. You can also use strong brewed coffee.
  • This is a moderately sweetened iced latte. If you like your drinks sweeter, add a tablespoon of maple syrup.
  • I like to use maple syrup in this recipe or another liquid sweetener because it combines easily with the other liquid ingredients. Granulated sweeteners like white sugar, brown sugar, etc., don’t combine as easily with milk.
  • Use unsweetened pumpkin puree, NOT pumpkin pie filling, which already contains added sweeteners.
  • This recipe makes one large iced latte. You can easily double or triple this recipe as needed.
  • Instead of the pumpkin, vanilla, spice, and syrup in this recipe, use 2-3 tablespoons of our homemade Pumpkin Syrup.
