Gallo Pinto (Costa Rican Rice & Beans)


One of the reasons I love this gallo pinto recipe is that it turns a handful of humble ingredients into an incredibly satisfying meal. Besides that, the black beans add plant protein, fiber, and plenty of staying power, while the rice makes it hearty. As a mom and health coach, I know how important breakfast is, especially for my 3 growing boys, and this dish is a fantastic way to start the day. 

I have kept the cooking method pretty simple, but every step has a purpose. I start by sauteing the onion and red pepper first to build a flavorful base before adding the beans and their cooking liquids. Then I let some of the liquid cook down before adding in the rice and salsa Lizano and giving them a chance to absorb the savory flavors. I stir in the cilantro once the gallo pinto is off the heat, and serve warm with my favorite sides. 

Even to this day, my friend, who taught me how to make gallo pinto, will stand beside me in the kitchen and watch me make it with a proud look on her face, steering me in the right direction if she sees fit. The first time my boys witnessed this, they pulled up chairs to watch. It was completely new and entertaining for them to see someone else boss their mom around in her own kitchen. I told them that it only applied to this friend and this dish, and that they should not get any ideas. Of course, whenever I make it now, they stand beside me and pretend to order me around and give me advice like “measure with your heart!” Ha! I cannot wait for you to make this recipe and enjoy a little taste of Costa Rica in your own kitchen.
