Pottukadalai Urundai Recipe (Udacha Kadalai Mittai Recipe)


Pottukadalai urundai also known as pottukadalai mittai, is a simple South Indian sweet made with pottukadalai, jaggery and cardamon. It is one of those easy homemade traditional sweets that needs only a few ingredients and comes together in less than 20 minutes.

Pottukadalai urundai, I love all these types of ladoo. Not only it is healthy but it satisfy my sweet cravings. I have already few more variations of this recipe and this is a addition to that. We usually make these during Navratri and karthigai deepam, especially when we want to give the kids a healthy homemade snack.

About Pottukadalai Urundai Recipe

Pottukadalai is one of those ingredients we always have in our pantry. We use it in so many dishes like chutneys, kurma, laddu and other sweets and snacks. It is inexpensive, handy and also a good source of plant based protein. Sometimes, it is even nice to simply munch on it as a quick snack. 

I have always loved maa laddu, so I wanted to try something different with pottukadalai. The idea came from the traditional pori urundai recipe. I thought of replacing the pori with roasted gram and making a similar urundai. It turned out really good and has become another favorite in our family. 

I like to toast my pottukadalai before to make it even more roasted and nutty. A little cardamom adds a nice flavour in every bite. You can make a batch and keep them ready for a quick snack. But honestly they never last long in our house. They usually disappear within minutes. 

This pottukadali urundai is a simple, healthy snack and needs only a few ingredients. Once you get the jaggery syrup right, the recipe is easy to make. It is so easy to make. All you have to look is for the right consistency. Check my Kadalai Urundai.

The syrup should get hard ball stage and then the rest is easy. This is how you will know that the stage is attained. When you take some syrup and pour it in a bowl of cold water, you should be able to gather the syrup into a ball and it gets hard ball and make a “donk” sound when you drop in a steel plate.

Ingredients

  • Roasted gram dal : Also known as pottukadalai or udacha kadalai. Use regular roasted gram dal or chutney dal that is easily available in stores. 
  • Jaggery : Jaggery is used to make the syrup. You can use pahu vellam for better texture.
  • Water : Water used to make the jaggery syrup. Add a measured amount of water to reach the right consistency. 
  • Cardamom powder : Cardamom powder gives the urundai a lovely aroma and flavour. 
  • Ghee : A little ghee used to grease the hands while shaping the urundais. It makes rolling them easier and gives the urundais a nice taste. 

Step by Step Pictures

1)Dry Roast gram dal for 2 to 3 minutes until slightly golden. Remove this to a plate and set aside to cool completely.

2)Take jaggery and water in a heavy bottom pan.

3)Heat till jaggery melts. It will take around 2 to 3 minutes.

4)Once the jaggery is completely melted. Strain this through a sieve.

5)Extract the jaggery water. This helps remove any impurities in the jaggery.

6)Now take it back in the same pan. Now add in cardamom powder.

7)bring it to a boil. Now you have to cook till it gets hard ball stage.

8)It will take around 4 to 5 minutes only.

9)Keep mixing gently. You can see now the syrup has started to thicken.

10)To check the syrup hard ball consistency. Take some syrup and pour it in a bowl of cold water.

11)you should be able to gather the syrup into a ball and it gets hard ball and make a “donk” sound when you drop in a steel plate. This is the hard ball consistency.

12)Once the syrup reaches this consistency. Now take it off the heat and add the roasted gram dal and mix well.

13)You should work very fast at this stage as the jaggery starts to harden.

14)Now grease your hands with ghee and take small portion of this hot mixture using a spoon and shape it into a ball.

15)If your mixture hardens, you can place it back on gentle heat until slightly melted again and shape.

16)Set aside to cool. As it cools it will harden.

17)Once cooled completely store it in an air tight container. Enjoy.

Expert Tips

Choosing Dal – Use fresh and fried gram dal for the best taste and crunchy texture. If using raw, roast them well. 

Syrup Consistency – Cook the syrup until it reaches a hard ball consistency. To check it, add a drop of syrup to water and it should form a firm ball without dissolving.  Once the jaggery syrup is ready, strain them to remove any dirt or impurities. 

Use Ghee – Apply some ghee on your palms before shaping the urundais. This makes the rolling much easier and gives them a nice taste and shine.

Flavourings – You can also add a pinch of dry ginger powder to enhance the flavour of the urundai.

Storage – Once the pottukadalai urundais are ready, let it cool completely and store them in a clean, dry airtight container. It keeps well for several days at room temperature when stored properly. 

Serving – These pottukadalai urundais make a lovely evening snack with tea or coffee. You can also pack it for a kids lunch box or make it during festivals like Navratri, Diwali and Karthigai deepam

FAQ 

Q. Why are my pottukadalai urundais not binding ? 

The most common reason is the jaggery syrup. If the syrup has not reached the right ball consistency, the mixture will not bind properly and the urundais may break apart. 

Q. How do I know the jaggery syrup is ready ? 

Drop a little syrup into a bowl of water. It should form a firm ball that does not dissolve when you roll it between your fingers. You can also drop a little syrup ball on a plate and it should make a light “donk” sound and it should not break or collapse. This is the right stage for making urundais. 

Q. How long can I store pottukadalai urundai ? 

Store them in a clean, airtight container at room temperature. They stay good for about 1 to 2 weeks when stored properly. Always use clean, dry hands or a spoon when taking them out.
