The Texas State Fair is now in season, and one of the hallmarks of this annual celebration of Texas culture is the food.

While there are a host of vendors offering wild combinations such as deep-fried butter and deep-fried gumbo, the corny dog—a hot dog perched on a stick, dipped into cornbread batter, and then placed into boiling oil until crisp and golden—is still a beloved classic.
