Piedmont BBQ Sauce (Lexington Dip)

Piedmont BBQ Sauce (Lexington Dip) – Derrick Riches

Piedmont BBQ sauce originated in the Carolinas and is commonly served alongside smoked pulled pork or pulled chicken. This sauce stands out from other barbecue sauces due to its thin consistency and tart, spicy flavor.

If you are in the Piedmont or Lexington regions of western North Carolina, be sure to try their classic Carolina-style barbecue sauce, locally known as Lexington dip. This popular condiment is typically served with pulled pork or added to pulled pork sandwiches topped with slaw. You can customize this vinegar-based sauce by adjusting the sweet and or spicy ingredients.

  • Apple cider vinegar
  • Apple juice (if you want it your Lexington Dip to remain tart, skip the juice and add water instead)

Piedmont Sauce Tips

  • Take your time: Don’t rush the cooking process. Hot vinegar and cayenne together can produce some powerful fumes that could irritate your eyes and nostrils. Simmer the Piedmont BBQ Sauce over low heat.
  • Make it in advance: For improved flavor, prepare the sauce 24-48 hours in advance. Store it in an airtight container or lidded jar in the refrigerator until ready to use. Heat it in the microwave for 30 to 45 seconds before serving. The extra time will allow all the flavors to meld together and not be quite as sharp.
  • Build-up: Mix a small amount of Piedmont BBQ Sauce with pulled chicken or pork, then adjust to suit your tastes.
