Sydney’s dirty Martini craze has dialled back the fuss at Ravenspur, with the arrival of The True Filth Martini.
Taran Howard, owner of Ravenspur, says he created the cocktail as a response to the increasingly over the top garnishes appearing on dirty Martinis around the city.
The idea was to take those flavours off the top of the glass and build them directly into the drink.
The result is a blue cheese fat-washed gin and vodka base, Anchovy Vermouth, olive brine and pear and quince-infused oil.
Each savoury element has been worked into the Martini itself, giving it what Ravenspur describes as essentially “a cheese board in a slightly unhinged martini”.
