How to make Chicken & Rice Soup<\/h2>\n

Ingredients<\/h3>\n

  • 2 tablespoons unsalted butter<\/li>\n
  • 3 medium stalks celery, finely chopped<\/li>\n
  • 2 medium carrots, thinly sliced<\/li>\n
  • 1 small yellow onion, finely chopped<\/li>\n
  • 8 ounces cremini mushrooms, thinly sliced<\/li>\n
  • 3 medium cloves garlic, finely chopped<\/li>\n
  • 3 cups shredded cooked chicken breast<\/li>\n
  • 8 cups reduced-sodium chicken broth<\/li>\n
  • 3 tablespoons lemon juice<\/li>\n
  • 1 tablespoon dried tarragon<\/li>\n
  • 2 teaspoons dried basil<\/li>\n
  • 1 1\/4 teaspoons salt<\/li>\n
  • 1\/2 teaspoon ground pepper<\/li>\n
  • 1 1\/4 cups quick-cooking brown rice<\/li>\n
  • 1 tablespoon fresh tarragon leaves<\/li>\n<\/ul>\n

    Directions<\/h3>\n
      \n
    1. Melt butter in a large Dutch oven over medium-high heat. Add celery, carrots and onion; cook, stirring occasionally, until slightly softened, about 4 minutes. Add mushrooms and garlic; cook, stirring occasionally, until most of the liquid from the mushrooms has evaporated, about 4 minutes.<\/li>\n
    2. Stir in chicken, broth, lemon juice, dried tarragon, basil, salt and pepper. Bring to a simmer over high heat. Stir in rice; cover and reduce heat to low. Cook, undisturbed, until the rice is tender, 10 to 12 minutes.<\/li>\n
    3. Divide the soup among 6 bowls and top evenly with tarragon leaves.<\/li>\n
    4. Serve it with a salad and some crusty bread for a perfect meal!<\/li>\n<\/ol>\n

      Storing Leftovers<\/h3>\n

      Chicken Rice Soup recipe is the ultimate comfort food, and it\u2019s perfect for meal prep because it freezes well. Store leftovers in an airtight container in the fridge for up to 4 days.<\/p>\n
