Zo\u00eb calls it Cookie Academy. You&#8217;ll find all the info on mixing, ingredient<br \/>\n  temperature, oven rack placement, ingredients, storage, etc. What I really love is the visual<br \/>\n  comparison of using different amounts of flour, butter, sugar, egg, baking<br \/>\n  soda, etc. It&#8217;s super helpful.\u00a0\n<\/p>\n<p>\n  Each recipe in the book has a sidebar with reference pages to the Cookie<br \/>\n  Academy that apply to that recipe. Since I couldn&#8217;t easily find hazelnut flour, I followed Zo\u00eb&#8217;s instructions\u00a0for making it, using <b><a href=\"https:\/\/www.sweetontraderjoes.com\/2023\/07\/trader-joes-dry-roasted-unsalted-hazelnuts-review.html\" target=\"_blank\">Trader Joe&#8217;s roasted hazelnuts<\/a><\/b>.\u00a0<\/div>\n<p>\n  Zo\u00eb also offers a variation of this recipe made with pistachios and tahini,<br \/>\n  which sounds incredible!\u00a0\n<\/p>\n<div>\n<div class=\"separator\" style=\"clear: both; text-align: left;\">\n  <a href=\"https:\/\/www.bakeat350.net\/p\/zoe-bakes-chocolate-hazelnut-cookies.html\" style=\"clear: left; float: left; margin-bottom: 1em; margin-right: 1em; text-align: left;\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"50\" data-original-width=\"200\" height=\"50\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEgeBqr0p7FwFowjoxpogdCnrbi0gdnz8kN8fI0tMu9g3yNBEjwv-DrkKFHXX1h_tZ6zqlIBU8ssMURIaGPeclaiGmsVdtYGJhLdltabAh-Shh5Zf2x_r_DzdOPmVmDx3Ls1NXkK_r3zPIcAHM2AJMzedPuU9nVsW0B8SUyN5xoFIhQ2z1Y5ojRr3r88YNU\/s1600\/print%20recipe%201-21.jpg\" width=\"200\"\/><\/a>\n<\/div>\n<p>YIELD: 20-24 cookies<\/p>\n<p>PREP TIME: 20 minutes<\/p>\n<p>REST TIME: 30 minutes<\/p>\n<p>BAKE TIME: 12-15 minutes<\/p>\n<p>2 1\/2 cups all-purpose flour<\/p>\n<p>1 cup hazelnut flour or meal*<\/p>\n<p>1\/2 teaspoon baking soda<\/p>\n<p>2 teaspoons baking powder<\/p>\n<p>1 1\/2 teaspoon kosher salt<\/p>\n<p>1 cup unsalted butter, room temperature\u00a0<\/p>\n<p>3 tablespoons Nutella, divided<\/p>\n<p>1 1\/2 cups lightly packed brown sugar<\/p>\n<p>1 tablespoon pure vanilla extract<\/p>\n<p>2 eggs, room temperature<\/p>\n<p>\n  12 ounces bittersweet, semisweet, or milk chocolate, chopped (I used chips)**\n<\/p>\n<\/div>\n<div>\n  *To make the hazelnut flour: in a food processor, pulse together 3\/4 cup light<br \/>\n  toasted hazelnuts (like <b><a href=\"https:\/\/www.sweetontraderjoes.com\/2023\/07\/trader-joes-dry-roasted-unsalted-hazelnuts-review.html\" target=\"_blank\">these from Trader Joe&#8217;s<\/a><\/b>) and 1\/4 cup of the<br \/>\n  all-purpose flour<i> called for in the recipe<\/i> until the nuts are very<br \/>\n  finely ground and the consistency of cornmeal.\u00a0\n<\/div>\n<p>\n  **(Hi, it&#8217;s Bridget.) For the chocolate, I used a mix of chips. I also<br \/>\n  reserved a handful and pressed them into the tops of the cookies right out of<br \/>\n  the oven for appearance&#8217;s sake. \ud83d\ude42\n<\/p>\n<p>\n  In a small bowl, whisk together the all-purpose and hazelnut flours, the<br \/>\n  baking soda, baking powder, and salt. Set aside.\u00a0\n<\/p>\n<p>\n  In a stand mixer fitted with the paddle attachment, cream the butter, 1<br \/>\n  tablespoon of Nutella, brown sugar, and vanilla on medium speed until creamy,<br \/>\n  about 3 minutes.\u00a0\n<\/p>\n<p>\n  Add the eggs, one at a time, beating on medium speed until incorporated. Add<br \/>\n  the flour mixture all at once and mix just until incorporated. Mix in the<br \/>\n  chocolate. You may need to give the bowl a couple of swipes to make sure the<br \/>\n  chocolate is evenly distributed.\u00a0\n<\/p>\n<p>\n  Line a baking sheet with parchment paper. Melt the remaining Nutella on low<br \/>\n  power in the microwave.\u00a0\n<\/p>\n<p>\n  Just before scooping, drizzle melted Nutella over the batter. (I did this a<br \/>\n  bit as a time as I scooped into the dough). Scoop the cookie dough using a #16<br \/>\n  cookie scoop or a 1\/4 cup portion onto the prepared baking sheet. You can make<br \/>\n  the cookies larger or smaller, but it will affect the baking time.\u00a0\n<\/p>\n<p>\n  Refrigerate dough balls for at least 30 minutes; if you have time, they<br \/>\n  improve if you let them chill for 24 to 36 hours. After they are chilled, you<br \/>\n  can bake or freeze them for later.\u00a0\n<\/p>\n<p>Preheat oven to 350. Line baking sheets with parchment paper.\u00a0<\/p>\n<p>\n  Evenly space 6 cookie balls on each sheet and sprinkle each one with flaky sea<br \/>\n  salt. Bake, one sheet at a time, in the middle of the oven for 12 to 15<br \/>\n  minutes, until golden brown on the bottom and just set on top.\u00a0\n<\/p>\n<p>\n  If desired, place a couple of chocolate chips directly into each cookie<br \/>\n  immediately after removing from the oven.
