Once ready set-up your grill for <a href=\"https:\/\/grilledjawn.com\/bbq-tips\/set-up-your-weber-for-indirect-grilling\/\" data-type=\"post\" data-id=\"3458\">two zone indirect cooking<\/a>. For this cook we used our <a href=\"https:\/\/vortexbbq.com\/\" rel=\"noopener\">Vortex<\/a>. If you don\u2019t have one, get one \u2014 The <a href=\"http:\/\/Vortex\" data-type=\"URL\" data-id=\"Vortex\">Vortex<\/a> makes everything better.<\/li>\n<li>Lightly season your chops. We dusted these with <a href=\"https:\/\/blueshog.com\/products\/sweet-savory-seasoning?variant=39795041468485&amp;utm_campaign=gs-2021-12-21&amp;utm_source=google&amp;utm_medium=smart_campaign&amp;gclid=CjwKCAjwzuqgBhAcEiwAdj5dRoZjRcMm35ETstKGbpKt3rU3kS1MYxYGW-1rC9Qpftd9aEu5UPuDbxoC12sQAvD_BwE\" rel=\"noopener\">Blues Hog Sweet &amp; Savory<\/a> but you can use anything that works well with pork.<\/li>\n<li>Place your chops direcly over the Vortex flame for 90 seconds. After 90 seconds turn the chop 45\u00b0 for 45 seconds. This gives the chop some good grilled lines for the reverse sear.<\/li>\n<li>Flip the Pork Chop and repeat Step 2.<\/li>\n<li>When time is up flip the Pork Chop and move to the outside of the grill or the cool cooking zone. Cover the grill and let it go 8 minutes.<\/li>\n<li>Flip the Chop and cook another 7-8 minutes.<\/li>\n<li>When the meat reaches 140-145\u00b0 remove from the grill and place on a cutting board to rest.<\/li>\n<li>Let the Reverse Seared Pork Chop rest for 10 minutes and serve.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<p>Do yourself a favor \u2014 let the meat rest. Resting the meat ensures all the juices and flavors stay within the cooked meat. I don\u2019t care who is hungry, who is yelling that they\u2019re hungry, or anything else \u2014 let the meat rest before serving.<\/p>\n<p>Cooking times will vary based on the thickness of the Pork Chop, so be wise and adjust accordingly.
