But if bitters are just high-proof spirits in wide-ranging flavors, why not consider other aromatic spirits for the job? At bars across the country, the move punches up highballs, Negronis and more.\u00a0<\/span><\/p>\n<p>&#13;<\/p>\n<p><span style=\"font-weight: 400;\">In cocktails like the <\/span><a href=\"https:\/\/punchdrink.com\/articles\/ultimate-best-corpse-reviver-no-2-chartreuse-cocktail-recipe\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Corpse Reviver<\/span><\/a><span style=\"font-weight: 400;\"> and the <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/st-john-frizells-sazerac\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Sazerac<\/span><\/a><span style=\"font-weight: 400;\">, absinthe and pastis are often used to coat a glass, adding a hint of anise flavor. The same rinsing technique works for everything from <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/a-moment-of-silence\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Campari<\/span><\/a><span style=\"font-weight: 400;\"> to <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/french-tuxedo\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">k\u00fcmmel<\/span><\/a><span style=\"font-weight: 400;\">. Another method is to dispense a spirit, like <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/amoxicillin\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Scotch<\/span><\/a><span style=\"font-weight: 400;\"> or <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/rouge-tomate-penicillin\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">mezcal<\/span><\/a><span style=\"font-weight: 400;\">, via an atomizer over the top of a cocktail as a finishing move. But even outside of the rinse or spritz, small amounts of spirits added directly to the mix can have an outsize impact. <\/span><\/p>\n<p>&#13;<\/p><\/div>\n<div id=\"\">\n<p><span style=\"font-weight: 400;\">At New York\u2019s Bar Goto, the Amaro Highball is pretty much what you\u2019d imagine: an ounce of the digestif (in this case, Amaro Nardini), topped with club soda. Peek at the ingredients, though, and there\u2019s a surprising addition. Two teaspoons of gin give the drink a subtly herbal, layered finish. Using a similar technique, New York\u2013based bar director Brian Evans <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/winterized-negroni\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">winterizes Negronis<\/span><\/a><span style=\"font-weight: 400;\">. Just a half-teaspoon of peaty Islay Scotch can \u201cround out the sharp, botanical edges of a London dry gin\u201d in the classic build, he says.\u00a0<\/span><\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p><span style=\"font-weight: 400;\">This approach even works with nonalcoholic spirits. At Sip\u2014one half of the bi-level New York bar Sip &amp; Guzzle\u2014the <\/span><a href=\"https:\/\/punchdrink.com\/recipes\/sixty-forty\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Sixty Forty<\/span><\/a><span style=\"font-weight: 400;\"> was designed by owner Shingo Gokan to channel a Martini when cold and a Manhattan as it settles. To bridge the gin and rye at the drink\u2019s base, Sip turns to two N\/A spirits from Seedlip, which \u201cact as a seasoning, bringing out some of the wood and herbal notes in the gin,\u201d says head bartender Ben Yabrow.
