Who doesn’t like a good oatmeal raisin cookie? First, let me tell you a story.

I was well on my way writing an “everything about gluten-free crackers” blog draft, which you’ll soon read, when someone who’s had my oatmeal raisin cookies asked me for the recipe. I pointed him to the blog and he said he couldn’t find it.

After confiirming it wasn’t there, I decided to prioritize this recipe because I think it’s a really good, all-round oatmeal raisin recipe. This cookie also lends itself to easy swap-ins for the raisins; think nuts (off-limits for me), coconut, chocolate and white chocolate chips and tons of dried fruit options. The fruit alternatives I’ve tried are dried blueberries, dried apricot, dried pineapple, dried cherries, white raisins, candied ginger, dried mango, dried apple and candied orange.

</wow-image>
