To read his interview click on the link.<\/a><\/p>\n Matt\u2019s Chunky Salsa<\/p>\n 10 pounds of vine ripe tomatoes or red Roma<\/p>\n Two large, sweet onions<\/p>\n Four medium size green jalape\u00f1os<\/p>\n Three bunches of fresh cilantro<\/p>\n Five limes and four lemons for juicing<\/p>\n 1\/4 cup kosher salt<\/p>\n 1\/4 cup butchers ground black pepper<\/p>\n Diced tomatoes in nickel size chunks or smaller<\/p>\n Dice onion into dime size chunks<\/p>\n De-stem all cilantro leaf as best as possible leaving minimal stems on it and give it in ultrafine dice<\/p>\n Slice and core jalape\u00f1os and dice into Half Dime size pieces<\/p>\n Add ingredients in the order and mix.<\/p>\n Then juice the lemons and lime add salt and pepper last.<\/p>\n Smile once you get your first bite with a chip<\/p>\n<\/p><\/div>\n <\/p>\n
