There are afternoons in Manhattan where the city simply hums with effortless glamour. A crisp fall breeze cutting down 18th Street and an invitation in hand to revisit one of my all time favorite Italian Sparkling Wines.<\/p>\n

Last week, I swept into Portale<\/strong> in Chelsea as Conegliano Valdobbiadene Consortium landed in New York for an exclusive masterclass and luncheon dedicated to Conegliano Valdobbiadene Prosecco Superiore DOCG<\/strong>. Forget every flat Prosecco that you had at with your brunch mimosa. True Prosecco Superiore<\/a><\/strong> is a completely different creature: historic, fiercely artisanal, and dripping with high-altitude terroir.<\/p>\n

Leading the room was acclaimed California sommelier Taylor Parsons<\/strong>. Bringing his signature intellectual rigor and laid back clarity to New York, Taylor Parsons Prosecco Superiore<\/strong> session, offered a deep dive through 17 dynamic pours. He practically reframed how our city looks at Italy\u2019s most misunderstood hillsides.<\/p>\n

Unmasking the Hills: Beyond the Sweetness Clich\u00e9<\/h3>\n

For decades, the narrative around Prosecco has been reduced to sugar levels: Brut, Extra Dry, Dry. But as Parsons demonstrated to New York\u2019s top wine community that Conegliano Valdobbiadene<\/strong> requires looking beyond dosage to the origin of the fruit. Conegliano Valdobbiadene is a UNESCO World Heritage<\/strong> landscape defined by dramatic, hogback hills so steep that mechanization is impossible. Every single cluster of Glera is harvested by hand. This Heroic viticulture demands between 600 to 900 hours of grueling, heroic labor per hectare each year.<\/p>\n

The thin skinned Glera grape has found its spiritual sanctuary here. Caught between cool Alpine currents from the north and warm Adriatic breezes from the south, the region thrives under a natural convection engine that prevents rot and locks in pure, crystalline acidity. Glera naturally moderates its sugar accumulation. It yields wines around 10% to 11.5% ABV, making it exceptionally food-friendly, low-intervention, and perfectly suited for mindful, modern dining.<\/p>\n

\"Conegliano\"Conegliano<\/figure>\n

Tectonic Drama: Reading Texture and Salinity in the Glass<\/h3>\n

Rather than getting lost in superficial descriptors of orchard fruit and white blossoms, our flight focused on texture, verticality, and weight. The soils here are a product of ancient geologic violence. Uplifted sea beds from 50 million years ago colliding with ancient glacial moraines. Furthermore, the fossilized limestone over mountain ridges and depositing iron-rich clay along the riverbeds are unique to this area.<\/p>\n

To anchor our tasting of the 17-bottle lineup, Parsons mapped out a three-tier geographic lens:<\/p>\n

  • The Southern Curb:<\/strong> Lower-elevation sites closer to the Piave River. Dominated by heavier clay and iron sediments, these wines delivered broader texture, lush phenolic shape, and grounding warmth.<\/li>\n
  • The Central Hills:<\/strong> Balanced marl and limestone zones showcasing striking orchard complexity, crisp white peach, and vibrant mineral drive.<\/li>\n
  • The Western and Northern Ridges (including Cartizze):<\/strong> High-elevation limestone plots offering pure verticality, razor-sharp acidity, and a mouthwatering, saline finish that lingered endlessly across the palate.<\/li>\n<\/ul>\n

    From ancient col fondo<\/em> styles (cloudy, bottle-fermented expressions driven by sourdough crust and crushed rocks) to razor-dry Extra Brut cuv\u00e9es with zero dosage, the tasting shattered the myth that Prosecco lacks aging potential or terroir distinction.<\/p>\n

    La Dolce Vita at Portale: Elevating the New York Table<\/h3>\n

    Following the masterclass, Portale curated a spread of modern Italian bites that showcased precisely why high-acid, savory sparkling wines reign supreme at the table. Prosecco Superiore cut through rich burrata, danced alongside delicate crudo, and refreshed the palate after bites of savory pasta.<\/p>\n

    The takeaway was undeniable: Conegliano Valdobbiadene is not a casual party starter<\/strong>. It is a serious, terroir-driven fine wine that belongs on New York\u2019s most prestigious wine lists alongside Champagne, Franciacorta, and Cava.<\/p>\n
