Every side of that little cube of <a href=\"https:\/\/girlcarnivore.com\/category\/lamb\/\" type=\"category\" id=\"138\">lamb<\/a> gets direct contact with the grate on one of the four turns. The marinade plus that flame-kissed flavor, it\u2019s so good that even people who think they don\u2019t like lamb will go back for another.  The grill sets it on all four sides. They vanish fast off the skewer at the grill, and whatever survives becomes the best thing in your fridge all week. Lamb kabob over rice, pulled into a pita, eaten cold while standing at the counter. Consistent size is non-negotiable: a 1-inch cube will be overdone by the time a 1.5-inch cube hits temp. Lamb shoulder works but runs fattier and holds the skewer a little looser. We love the clean, meaty flavor of the American lamb from <a href=\"https:\/\/freedomrunfarm.org\/\" target=\"_blank\" rel=\"noreferrer noopener\">Freedom Run Farm<\/a>. <\/li>\n<li><strong>Red onion:<\/strong> Cut into 1-inch petals, sturdy enough to take high heat without going to mush between turns.<\/li>\n<li><strong>Red bell pepper:<\/strong> 1-inch pieces to match the lamb cubes\u2019 width for even cooking.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For the Marinade:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Olive oil<\/strong> or avocado oil<\/li>\n<li><strong>Lemon juice:<\/strong> Fresh, not bottled. Brightens the whole marinade and starts tenderizing the surface. Don\u2019t go past 24 hours or it will start to turn the outer layer of the lamb mushy.<\/li>\n<li><strong>Garlic<\/strong><\/li>\n<li><strong>Kosher salt<\/strong><\/li>\n<li><strong>Black pepper<\/strong><\/li>\n<li><strong>Ground cumin<\/strong><\/li>\n<li><strong>Paprika<\/strong><\/li>\n<li><strong>Dried oregano:<\/strong> Classic Mediterranean note, ties the cumin and coriander together.<\/li>\n<li><strong>Ground coriander:<\/strong> Pairs with the cumin and rounds out the spice without adding heat.<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Metal skewers:<\/strong> Flat ones, not round. Flat skewers grip the meat and don\u2019t spin when you try to turn them. At least 12 inches long. No soaking required.<\/li>\n<li><strong>Instant-read thermometer:<\/strong> The only reliable way to catch lamb kabobs at 145\u00b0F before they go gray all the way through.<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-lamb-kabobs\">\ud83d\udcdd How to Make Lamb Kabobs<\/h2>\n<ol class=\"wp-block-list\">\n<li><strong>Make the marinade.<\/strong> Whisk together the olive oil, lemon juice, minced garlic, kosher salt, pepper, cumin, paprika, oregano, and coriander in a large bowl until the salt dissolves and everything is combined.<\/li>\n<li><strong>Marinate the lamb.<\/strong> Pat the lamb cubes dry with paper towels \u2014 dry meat browns better. Add to the marinade and toss until every piece is coated. Cover and refrigerate 2\u20134 hours minimum, up to 24 hours. Pull from the fridge 20\u201330 minutes before grilling so it\u2019s not cold going onto the grates.<\/li>\n<li><strong>Heat the grill.<\/strong> Preheat to medium-high (around 400\u2013450\u00b0F). Clean the grates with a brush, then oil them well. A cold or dirty grate is how you lose crust on the first turn.<\/li>\n<li><strong>Build the skewers.<\/strong> Thread the lamb onto metal skewers, alternating with onion petals and bell pepper. <strong>Leave small gaps between each piece<\/strong> \u2013 not tightly packed. That space lets heat circulate around the sides instead of steaming the meat against the vegetables.<\/li>\n<li><strong>Grill over direct heat.<\/strong> Place skewers directly over the heat source. Cook 8\u201312 minutes total, turning every 2\u20133 minutes, until the edges are deeply charred and the lamb reads 145\u00b0F internal on an instant-read thermometer for medium (pink center). Pull at 140\u00b0F if the grill is running hot \u2013 carryover will bring it up 3\u20135\u00b0F during rest.<\/li>\n<li><strong>Rest and serve.<\/strong> Rest the skewers 5 minutes before serving. The extra fat can cause more flare-ups, so keep a cooler zone ready.<\/li>\n<li><strong>Lamb to beef sirloin:<\/strong> Marinate 4\u20138 hours, target 130\u2013135\u00b0F internal for medium-rare. Loses the lamb flavor entirely but works with the spice profile.<\/li>\n<li><strong>Lemon juice to red wine vinegar:<\/strong> Slightly more acidity, less brightness. Works, but the citrus lift at the end is different.<\/li>\n<li><strong>Paprika to smoked paprika:<\/strong> Adds a subtle smoke layer \u2014 a good move on a gas grill where you\u2019re not getting any smoke from the fire.<\/li>\n<li><strong>Metal skewers to wooden skewers:<\/strong> Soak in water for 30 minutes first or the exposed tips will char before the lamb is done. Round wooden skewers also let the meat spin, which makes turning harder.<\/li>\n<li><strong>Red bell pepper to zucchini or cherry tomatoes:<\/strong> Zucchini works well. Tomatoes soften fast and fall off by the third turn \u2013 use them if you\u2019re okay with that\u2026..<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-meat-nerd-tips\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Cut the meat in uniform pieces.<\/strong> This is the single biggest thing that separates a good batch from an uneven one. If you have pieces of different sizes on the same skewer, you\u2019ll chase the big ones and overcook the small ones.<\/li>\n<li><strong>Don\u2019t marinate past 24 hours.<\/strong> The lemon acid keeps working after the lamb is fully flavored. Past 24 hours, the outer layer starts breaking down texturally:  you\u2019ll notice it as a slightly mushy surface once grilled.<\/li>\n<li><strong>Cold lamb means an uneven cook.<\/strong> If you cook lamb straight from the fridge, the outside sears and chars while the center is still cold. Give it 20\u201330 minutes at room temp before it hits the grill.<\/li>\n<li><strong>Resist constant turning.<\/strong> Two to three minutes per side, four turns total. Let the crust build between turns. Grill the kabobs over the hot side for direct char, and use the cool side to manage flare-ups from the lamb fat. The charcoal smoke adds a layer the gas grill can\u2019t replicate. We use Cowboy lump charcoal.\u00a0<\/span><br \/>\n<span class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\" style=\"display: block;\"><strong>Gas grill:<\/strong> Preheat all burners on high, then turn one burner off to create a cooler zone. Grill over the lit burners for direct heat. Add a foil packet of Western Wood hickory wood chips (a handful of chips, sealed with a few holes poked in the top) directly on the lit burner to get some smoke into the cook \u2013 it makes a real
