Depending on the recipe or restaurant, the exact ingredients and proportions can vary.

It is also commonly referred to as Paneer Makhani or Butter Paneer.

The word makhani refers to a buttery style of gravy. While there are subtle differences between recipes, the terms are often used interchangeably, particularly on restaurant menus.

What makes this curry different from some of the more heavily spiced paneer dishes is its balance. The tomatoes provide acidity, butter adds richness, cashews create body, cream gives it a silky finish, and spices add fragrance without overpowering the sauce.

The result is a curry that is rich but not aggressively spicy, creamy but still tomato-forward, and aromatic without being overwhelming.

Why You’ll Love This Paneer Butter Masala

There are plenty of paneer curries to choose from, but Paneer Butter Masala has a very specific appeal.

Here are a few reasons this recipe is worth keeping in your regular dinner rotation:

The gravy can be made ahead: You can prepare the sauce in advance and finish the curry just before serving.

It takes about 30 minutes: You don’t need to spend an entire afternoon making a restaurant-style curry.

The gravy is incredibly flavorful: The combination of tomato, butter, cashews, cream, and spices creates a rich and balanced sauce.

Mildly spiced: This makes it a good option when cooking for a family with different spice preferences.

Easy-to-find ingredients: Once you stock a few Indian spices, most of the ingredients are pantry or refrigerator staples.

Works for both weeknights and entertaining: Serve it with rice for an easy dinner or naan and a few sides for a more elaborate Indian meal.

What Does Paneer Butter Masala Taste Like?

If you’ve never made it at home, think of Paneer Butter Masala as a mild, creamy, tomato-based Indian curry with a buttery and aromatic finish.

The first thing you notice is the tomato. It provides a gentle tanginess that keeps the rich ingredients from making the gravy feel too heavy.

Then comes the butter and cream, which soften the acidity of the tomatoes.

Cashews give the gravy a subtle nuttiness and help make it thick and velvety.

The spices are there mostly for aroma and depth rather than intense heat.

And finally, kasoori methi adds that distinctive restaurant-style fragrance that makes the curry instantly recognizable.

The overall flavor should be:

creamy + buttery + mildly tangy + slightly sweet + aromatic + gently spiced.

If your curry tastes overwhelmingly sour, bitter, spicy, or sweet, the balance needs adjusting.

Ingredients for Paneer Butter Masala

The ingredient list might look long because of the spices, but the actual cooking process is quite simple.

Paneer

You can use either homemade paneer or good-quality store-bought paneer.

I prefer cutting the paneer into relatively small bite-sized cubes so that every piece gets coated with the gravy.

If you’re using refrigerated packaged paneer and it feels firm, soak the cubes in warm water for about 15 minutes before adding them to the curry. This simple step can make a big difference in texture.

Should you fry the paneer?

You don’t have to.

Some recipes lightly pan-fry paneer before adding it to the gravy. That creates a slightly golden exterior, but it can also make the paneer firmer.

For this curry, I prefer adding the paneer directly to the gravy toward the end of cooking.

That keeps the texture soft and allows the paneer to absorb the sauce.

Tomato Puree

Tomatoes are the foundation of this curry.

I often use canned tomato puree for Paneer Butter Masala because it gives me a consistent color and texture.

When tomatoes are at their peak during summer, you can absolutely make your own tomato puree.

However, for a rich restaurant-style curry, canned puree is convenient and works beautifully.

Why does tomato quality matter?

Tomatoes vary significantly in acidity and sweetness.

Some fresh tomatoes can be very acidic, while others are naturally sweet and less tangy.

That’s why you should always taste the gravy toward the end and adjust the balance rather than blindly following a fixed amount of sugar.

Onion

Onion provides sweetness and body to the gravy.

You don’t need to brown the onion deeply for this recipe.

Unlike some Indian curries where deeply caramelized onions are central to the flavor, Paneer Butter Masala is about a smoother, more delicate tomato-based gravy.

Ginger and Garlic

Fresh ginger and garlic add an aromatic base to the curry.

I recommend freshly grated or finely pounded ginger and garlic whenever possible.

Since the curry cooks relatively quickly, fresh aromatics make a noticeable difference.

Cashews

Cashews are one of my favorite ingredients in this curry.

They provide:

richness

body

mild nuttiness

a creamy mouthfeel

natural thickening

You don’t need to add an enormous amount.

Ground cashews blended into the finished gravy help create that luxurious restaurant-style consistency.

If you have a nut allergy, I’ll cover substitutions below.

Butter

Obviously, butter is an important part of Paneer Butter Masala.

But more butter doesn’t necessarily mean better curry.

The butter should complement the tomato gravy rather than overwhelm it.

I prefer adding some butter toward the end of cooking, when it can remain noticeable in the finished sauce.

Heavy Cream

Heavy cream gives the curry its final creamy texture.

You don’t need to use a large quantity.

The cashews already contribute richness, so the cream is more of a finishing ingredient.

Add it toward the end and avoid aggressively boiling the curry afterward.

Kasoori Methi

Kasoori methi, or dried fenugreek leaves, is one of the most important ingredients in this recipe.

If you’ve ever wondered why homemade Indian restaurant-style curries sometimes taste different from the ones served at restaurants, kasoori methi is often part of the answer.

Take the dried leaves between your palms and gently crush them before adding them to the curry.

This releases their aroma.

Don’t substitute a generic curry powder for kasoori methi. It has a very specific flavor.

Spices Used in Paneer Butter Masala

This recipe uses both whole and ground spices.

Whole spices

I use:

cumin seeds

fennel seeds

green cardamom

bay leaf

cinnamon stick

These are added to the hot oil at the beginning.

Allowing the spices to gently sizzle in oil helps release their natural oils and fragrance.

Ground spices

The curry uses:

turmeric

cumin powder

fennel powder

Kashmiri chili powder

cinnamon powder

garam masala

The combination might seem unusual if you’ve never used fennel and cinnamon together in a tomato curry, but they add a gentle sweetness and warmth.

One of my favorite ingredients here is cinnamon powder.

It isn’t included in every Paneer Butter Masala recipe, but a small amount adds a subtle sweetness and warmth to the sauce.

The process is straightforward, but there are a few places where technique matters.

Step 1: Prepare the paneer

Cut the paneer into bite-sized cubes.

If the paneer is refrigerated and feels firm, place the cubes in warm water.

Set aside while you prepare the gravy.

You don’t need to marinate the paneer for this recipe.

Step 2: Prepare the ginger and garlic

Pound or finely grate the fresh ginger and garlic.

Freshly prepared ginger-garlic gives the curry a much more aromatic base than using old, dried-out ingredients.

Set it aside.

Step 3: Bloom the whole spices

Place a skillet or wide pan over medium heat.

Add the oil.

Once the oil is hot, add:

cumin seeds

fennel seeds

bay leaf

green cardamom

cinnamon stick

Let the spices sizzle for a few seconds.

You should be able to smell the spices becoming fragrant.

Don’t let them burn.

Step 4: Add kasoori methi

Take about a teaspoon of dried kasoori methi and crush it gently between your palms.

Add it to the pan.

This small step helps release the aromatic oils from the dried leaves.

Step 5: Add ginger and garlic

Add the prepared ginger and garlic.

Stir for a few seconds.

You don’t want to deeply brown the garlic.

The goal is simply to cook the raw aroma out and infuse the oil.

Step 6: Add onion

Add the finely diced onion along with some salt.

Add the turmeric powder.

Cook for about a minute.

The onion doesn’t need to become dark brown.

You want it softened enough to blend naturally into the tomato-based gravy.

Step 7: Add the ground spices

Add:

cumin powder

fennel powder

Kashmiri chili powder

Stir everything together.

Cook the spices for about two minutes.

If the pan looks dry, add a tiny splash of water rather than letting the spices scorch.

Step 8: Add the tomato puree

Pour in the tomato puree.

Add approximately one cup of water.

Add the sugar and remaining salt.

Stir well.

Finally, add the cinnamon powder.

Step 9: Simmer the gravy

Cover the pan and let the tomato mixture simmer for about 15 minutes.

This is an important part of the recipe.

Don’t rush it.

The tomato needs time to cook with the aromatics and spices.

As it simmers, the sharpness of the raw tomato mellows and the spices become integrated into the sauce.

If the gravy looks too thick while cooking, add a splash of water.

Step 10: Blend the gravy if desired

For a smoother restaurant-style finish, you can blend the tomato gravy before adding the paneer.

This is optional.

If you prefer a rustic texture, simply continue with the recipe.

For an ultra-smooth restaurant-style gravy, blend the sauce thoroughly and pass it through a fine-mesh sieve.

That extra step isn’t necessary for everyday cooking, but it produces an exceptionally silky sauce.

Step 11: Add paneer

Add the paneer cubes.

Stir gently.

Cook for approximately one minute.

Paneer doesn’t need to simmer for a long time.

Overcooking it can make the texture firm or rubbery.

Step 12: Add garam masala and kasoori methi

Add the remaining kasoori methi and garam masala.

Give everything a gentle stir.

At this point, your kitchen should smell incredible.

Step 13: Finish with butter, cashews and cream

Add the butter.

Then add the ground cashews and heavy cream.

Stir gently until everything is incorporated.

Allow the curry to simmer for approximately one minute.

Don’t boil it aggressively.

Taste the gravy.

This is the moment to adjust:

salt

sweetness

acidity

spice

consistency

Step 14: Serve

Transfer the Paneer Butter Masala to a serving bowl.

Drizzle a little cream over the top.

You can also finish it with a small pat of butter and fresh cilantro.

Serve immediately.

How to Make the Best Restaurant-Style Paneer Butter Masala

Don’t rush the tomato – This is probably the most important tip. If you don’t cook the tomato mixture properly, the curry can taste raw and acidic. Give it the full simmering time. The tomato should taste cooked rather than sharp.

Don’t overcook paneer – Paneer doesn’t need 15 or 20 minutes of simmering. Add it near the end. This helps preserve its soft texture.

Crush kasoori methi – Don’t simply throw dried fenugreek leaves into the pan. Crush them between your palms first. You’ll notice the difference in aroma.

Use Kashmiri chili powder – Kashmiri chili powder is useful when you want a vibrant red-orange color without making the curry extremely hot. If you substitute a very hot chili powder, reduce the quantity according to your spice tolerance.

Taste before adding more sugar – Tomatoes vary enormously.
