Venues like Harry Denton\u2019s Starlight Room (which reopened as <a href=\"https:\/\/www.beacongrand.com\/starlite\" target=\"_blank\" rel=\"noreferrer noopener\">Starlite<\/a> in 2024) and 15 Romolo had been nurturing talented bartenders for years, and <a href=\"https:\/\/www.tommysmexican.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tommy\u2019s Mexican Restaurant<\/a> was introducing the <a href=\"https:\/\/imbibemagazine.com\/recipe\/tommys-margarita-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tommy\u2019s Margarita<\/a> to the world. The bars at <a href=\"https:\/\/www.absinthe.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Absinthe Brasserie &amp; Bar<\/a> and Slanted Door (the latter now closed) were functioning as cocktail talent incubators, with bartenders including Marco Dionysos, Jeff Hollinger, and Jonny Raglin at Absinthe (Hollinger and Raglin would go on to open Comstock Saloon), and Erik Adkins, <a href=\"https:\/\/imbibemagazine.com\/characters-jennifer-colliau\/\" data-type=\"post\" data-id=\"11544\" target=\"_blank\" rel=\"noreferrer noopener\">Jennifer Colliau<\/a>, and <a href=\"https:\/\/imbibemagazine.com\/podcast\/episode-91-thad-vogler-and-the-single-village-fix\/\" data-type=\"podcast\" data-id=\"71688\" target=\"_blank\" rel=\"noreferrer noopener\">Thad Vogler<\/a> at Slanted Door working to develop a distinctive San Francisco take on the art of the cocktail.<\/p>\n<p class=\"wp-block-paragraph\">Everything clicked into a higher gear in 2006, with the opening of <a href=\"https:\/\/alembicsf.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Alembic<\/a> and <a href=\"https:\/\/www.bourbonandbranch.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Bourbon &amp; Branch<\/a>. Brian Sheehy was a co-founder of Bourbon &amp; Branch, and credits founding bartender Todd Smith with helping to create a bar that would last decades. \u201cTodd had 20 years of cocktail and spirits knowledge that he poured into the cocktail program he created for Bourbon &amp; Branch,\u201d Sheehy says. \u201cAnd the top cocktail bartenders in San Francisco all looked up to Todd, so they lined up to support him and joined our team.\u201d Bartenders including Jon Santer, Dominic Venegas, and Neyah White (who would go onto establish an influential cocktail program at Nopa) were early faces behind the bar, and Bourbon &amp; Branch helped introduce cocktails including Smith\u2019s <a href=\"https:\/\/imbibemagazine.com\/recipe\/black-manhattan-recipe\/\" data-type=\"recipe\" data-id=\"31551\" target=\"_blank\" rel=\"noreferrer noopener\">Black Manhattan<\/a> and Santer\u2019s Revolver that would go on to become <a href=\"https:\/\/imbibemagazine.com\/cocktails-that-have-flexed-their-influence-over-the-past-20-years\/\" data-type=\"post\" data-id=\"105659\" target=\"_blank\" rel=\"noreferrer noopener\">modern classics<\/a>.<\/p>\n<p class=\"wp-block-paragraph\">Another 2006 newcomer was <a href=\"https:\/\/www.ryesf.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Rye<\/a>, opened by Jon Gasparini and Greg Lindgren (the partners behind 15 Romolo) and, later, managing partner Phil Mauro. Gasparini says Rye marked a bit of a departure for San Francisco bars. \u201cThere weren\u2019t a lot of standalone bars in 2006 doing fresh, culinary-driven drinks\u2014that was usually associated with a restaurant kitchen,\u201d Gasparini says. \u201cCocktails were very precious and important, and we were doing the West Coast\u2013style program with herbs and muddlers. We made it really hard on ourselves, but we\u2019ve figured out over time how to make it easier.\u201d<\/p>\n<p class=\"wp-block-paragraph\">In the decades since, some influential spots have remained as many others experienced a shorter lifespan, while still others have found a second wind. (Gasparini and Lindgren closed 15 Romolo post-pandemic, but after extensive refurbishment, it\u2019s set to reopen by this fall.)
