Michael is a founder of the brewery <a href=\"https:\/\/sapwoodcellars.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Sapwood Cellars<\/a> in Columbia, MD. He is the author of the book \u201c<a href=\"http:\/\/amzn.to\/14kf0yM\" target=\"_blank\" rel=\"noreferrer noopener\">American Sour Beers<\/a>\u201c(Amazon Affiliate Link) as well as the blog <a href=\"https:\/\/www.themadfermentationist.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">The Mad Fermentationist<\/a> online. He\u2019s also a certified beer judge.<\/li>\n<li>Michael tells us a bit about the new developments at his brewery Sapwood Cellars.<\/li>\n<li>We talk about why advanced hop techniques have become so important for modern IPA brewing.<\/li>\n<li>Michael tells us about the techniques he uses to reduce oxidation when dry hopping.<\/li>\n<li>We discuss using agitation to improve dry hop oil transfer.<\/li>\n<li>Michael talks about some of the tradeoffs made when we dry hop like time versus temperature.<\/li>\n<li>We discuss haze and how you can choose specific yeasts and hops to maximize or minimize the haze in the finished beer.<\/li>\n<li>Michael explains how the techniques, products and ingredients all play a role in the final flavor of the beer.<\/li>\n<li>We talk about some of the many new hop products available to brewers including extracts, concentrated hop pellets, hop oil extracts and more.<\/li>\n<li>Michael explains how all of these products have advantages and disadvantages and why the brewer is ultimately making tradeoffs.<\/li>\n<li>Michael gives us his closing thoughts.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>iTunes Announcements<\/strong>: I launched a new <a href=\"https:\/\/itunes.apple.com\/us\/podcast\/beersmith-home-beer-brewing\/id824963861\">video channel for the BeerSmith podcast on iTunes<\/a>, so subscribe now!
