The smell of the onions alone, forty-five minutes of low-and-slow caramelization before the cast iron even goes on, has us drooling before these are anywhere near ready to eat. Everything we love about French onion soup and everything we love about a great burger in one crispy, jammy, Gruy\u00e8re-covered bite. Classic yellow mustard \u2013 <em>not Dijon<\/em> \u2013 spread on the patty before it hits the griddle has a specific acidity and water content that reacts with the heat and builds a darker, more textured sear than beef alone would produce. We\u2019ve been using this trick on most of our thin patties since we first saw it and the difference shows up in the crust color and in the flavor. <\/p>\n<p class=\"wp-block-paragraph\">The other trick: the onion jam is not done when you think it\u2019s done. Onions release water before they brown, which means you\u2019re waiting through a steaming phase before you ever see caramelization. Rush the heat to skip it and you get soft, sweet onions. Only needed if your onions are stubborn after a long cook. Some batches are more resistant than others.<\/li>\n<li><strong>Worcestershire sauce: <\/strong>Adds savory depth and a slightly fermented edge that keeps the jam from tasting like just sweet onions.<\/li>\n<li><strong>Beef broth: <\/strong>Use a good one, like our homemade one or a rich bone broth. It gets reduced into the jam and you\u2019ll taste it.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For the Thyme Aioli:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Mayo<\/strong><\/li>\n<li><strong>Lemon juice<\/strong>: Fresh squeezed, just a small hit. Brightens the whole thing.<\/li>\n<li><strong>Fresh thyme leaves<\/strong>: Stripped from the stems. Dried won\u2019t give you the same bright, herby flavor.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For the Burgers:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Ground beef, 80\/20 chuck<\/strong>: The fat content is non-negotiable for burgers. Leaner blends won\u2019t build the same crust or flavor. Freshly ground from the butcher if you can get it.<\/li>\n<li><strong>Kosher salt:<\/strong> Season right as the beef hits the griddle, not before.<\/li>\n<li><strong>Yellow mustard<\/strong>: Classic yellow only. The acidity and water content interact with high heat to build that dark, lacquered crust. Dijon won\u2019t do the same thing.<\/li>\n<li><strong>Freshly cracked black pepper<\/strong>: Coarse grind if you can find it. We use a 16 mesh black pepper.<\/li>\n<li><strong>Gruy\u00e8re cheese<\/strong><\/li>\n<li><strong>Soft burger buns<\/strong>: Brioche or potato. Something that can handle the fat and moisture without falling apart.<\/li>\n<li><strong>Arugula<\/strong>: The pepper and bitterness cut through the richness. Iceberg won\u2019t do the same work here.<\/li>\n<\/ul>\n<h3 id=\"h-equipment\" class=\"wp-block-heading\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Cast-iron skillet or flat-top griddle<\/strong>: Non-negotiable. You need a surface that holds screaming-hot, even heat. If you\u2019ve used the same technique for a <a href=\"https:\/\/girlcarnivore.com\/cast-iron-skillet-steak\/\">cast iron skillet steak<\/a>, you already know what the heat requirements look like.<\/li>\n<li><strong>Thin, stiff metal spatula<\/strong>: The crust releases when it\u2019s ready. A thin, rigid spatula gets under it cleanly without tearing.<\/li>\n<\/ul>\n<h2 id=\"h-how-to-make-french-onion-burgers\" class=\"wp-block-heading\">\ud83d\udcdd How to Make French Onion Burgers<\/h2>\n<ol class=\"wp-block-list\">\n<li><strong>Make the onion jam.<\/strong> Melt butter in a wide skillet over medium-low heat. Add the onions and salt, stir to coat, and cook for 45 to 60 minutes, stirring occasionally. The onions will release liquid and steam first \u2013 keep cooking. They\u2019ll brown once the moisture cooks off. You\u2019re looking for deeply browned, almost sticky onions reduced to a fraction of their original volume.<\/li>\n<li>Add Worcestershire and beef broth, stir to combine, and simmer until the liquid is absorbed and the jam is <strong>thick, glossy, and spoonable<\/strong>, another 3 to 5 minutes. If your onions still aren\u2019t browning after a long cook, add the optional sugar. Finish with black pepper and set aside. The jam can be made up to 3 days ahead.<\/li>\n<li><strong>Make the thyme aioli.<\/strong> Whisk together mayo, lemon juice, fresh thyme leaves, and black pepper until smooth. Cover and refrigerate until ready to use. Can be made up to 2 days ahead for better flavor.<\/li>\n<li><strong>Prep the beef.<\/strong> Divide the ground beef into 4 loose balls and then shape into thin patties \u2013 don\u2019t compact or overwork them \u2013 about 1\/4\u2033 thick. Lightly spread \u00bd to \u00be teaspoon of yellow mustard on one side of each ball.<\/li>\n<li><strong>Heat the skillet.<\/strong> Get your cast-iron skillet or flat-top over high heat until screaming hot, about 3 to 5 minutes. Lightly oil the surface with neutral oil or beef tallow.<\/li>\n<li><strong>Smash and sear.<\/strong> Place each patty mustard-side down onto the hot griddle. <strong>Immediately press down firmly with your spatula to get a good sear on the patty<\/strong>. Season the top side with kosher salt. Cook undisturbed for 2 to 3 minutes until a <strong>deep mahogany crust forms and releases cleanly<\/strong> from the pan. If the burger sticks, wait another 10 to 15 seconds \u2014 the crust will let go when it\u2019s ready.<\/li>\n<li><strong>Flip and melt.<\/strong> Flip each patty, season with a pinch of black pepper, and lay a slice of Gruy\u00e8re directly on top. Cover with a dome or lid and cook for 60 to 90 seconds, until the cheese is fully melted and the internal temp reads at least 160\u00b0F.<\/li>\n<li><strong>Toast the buns.<\/strong> Remove the patties and toast the buns cut-side down in the remaining burger fat, pressing lightly so they soak it up. Brush the tops with a little fat as well for shine and flavor.<\/li>\n<li><strong>Assemble.<\/strong> Spread a thick layer of thyme aioli on the bottom bun. Add a handful of arugula, then the patty, then a generous spoonful of onion jam. Provolone also works. Skip American \u2014 it makes this a different burger entirely.<\/li>\n<li><strong>Fresh thyme for dried in the aioli:<\/strong> Use half the amount. Make it at least a day ahead if using dried so the flavor has time to develop.<\/li>\n<li><strong>Arugula for butter lettuce:<\/strong> Less bite, softer texture. The pepperiness of arugula actually does something for this burger \u2014 butter lettuce won\u2019t fight the richness the same way.<\/li>\n<li><strong>80\/20 chuck for 85\/15:<\/strong> You can do it, but the crust won\u2019t be as dramatic and the burger will be drier. Not the move for burgers.<\/li>\n<li><strong>Beef broth in the jam for dry red wine:<\/strong> Darker, more complex flavor. Use the same amount and simmer until fully reduced.<\/li>\n<li><strong>Brioche for potato buns:<\/strong> Both work. Avoid anything crusty. Season on the griddle, after the smash, every time \u2014 not before.<\/li>\n<li><strong>The mustard creates a distinct lacquered crust.<\/strong> It\u2019s not just flavor. The acidity in classic yellow mustard reacts with high heat to create a darker, more textured sear than beef alone. This is exactly why Dijon doesn\u2019t work \u2014 it\u2019s too wet and has the wrong acid profile for this application.<\/li>\n<li><strong>Make the onion jam a day ahead.<\/strong> It firms up in the fridge into something even more concentrated, and reheating it with a splash of water brings it back to spoonable. Flavors deepen overnight. Two stacked here gets overshadowed by the onion jam and the whole French onion experience turns muddy.
