I love curry year-round, but there&rsquo;s something special about those crisp autumn months that really makes me crave it, and this one does the trick! It&rsquo;s a completely vegan meal that comes together in less than an hour, and at $2.74 per serving, it feels restaurant-worthy without the restaurant price. Serve it over a fluffy bed of rice (which is <em>included <\/em>in this recipe cost!), and you&rsquo;ve got comfort in a bowl. Grab a pie pumpkin and follow my step-by-step photos, taking your time and using your handy dandy chef&rsquo;s knife. Breaking down the pumpkin is the most hands-on part of this recipe, but once it&rsquo;s diced, the rest comes together pretty quickly. Can&rsquo;t find a pie pumpkin? Don&rsquo;t fret. Butternut squash can step in here (or try our <a href=\"https:\/\/www.budgetbytes.com\/butternut-squash-curry\/\">butternut squash curry<\/a>, which is another cozy option!)<\/p>\n<p class=\"wp-block-paragraph\">Once the pumpkin is diced, I build serious flavor with simple ingredients like fresh garlic, ginger, tomato paste, and warm spices. I also use <strong>both fresh pumpkin and pumpkin pur&eacute;e<\/strong> in this recipe for a reason. The fresh pumpkin stays tender but still gives you a little bit of bite, and the pur&eacute;e helps create that rich, thick sauce I want in this curry. Saut&eacute; the pumpkin and onions until they start to soften, then add fresh garlic and ginger to build a fragrant base. Tomato paste helps deepen the flavor, and the warm spices and creamy coconut milk bring everything together. Then I finish it with a little brown sugar to balance the spices and add subtle, warm molasses notes. Give it one more taste, adjust the seasoning, and don&rsquo;t be scared to add an extra splash of broth if needed. Personally, I like my curry thick and velvety. &#128523;<\/p>\n<div class=\"block-callout icon-callout\">\n<h2 class=\"block-callout__header\"><span>Recipe Success Tips<\/span><\/h2>\n<div class=\"block-callout__innerBlocks\">\n<div class=\"acf-innerblocks-container\">\n<ol class=\"wp-block-list\">\n<li><strong>Not sure what a pie pumpkin is?<\/strong> They&rsquo;re also known as sugar pumpkins or cooking pumpkins. They&rsquo;re smaller than carving pumpkins, usually about 6-8 inches in diameter, and are sold mostly in the fall. Pie pumpkins are grown for cooking and baking and tend to have sweeter, denser, more flavorful flesh with less stringy pulp than carving pumpkins. (Avoid carving pumpkins for this reason!)<\/li>\n<li><strong>Aim for roughly &frac12;-inch pieces when dicing the pumpkin. <\/strong>They don&rsquo;t need to be perfectly identical, but keeping most of the pieces around the same size helps them become tender at roughly the same time. This way, you won&rsquo;t end up with some pieces still firm while others get too soft. See my prep photos below for a visual reference on how small I dice my pumpkin!<\/li>\n<li><strong>Make sure the oil in the pan is nice and hot before adding the pumpkin.<\/strong> This will help it brown on some sides and not stick to the pan. Also, letting it sit undisturbed for the first 5 minutes or so will help it sear.<\/li>\n<li><strong>Don&rsquo;t cook the pumpkin until it&rsquo;s falling apart!<\/strong> You want it tender enough to easily pierce with a fork, but the cubes should still hold their shape and have a little bite. Remember, the pumpkin keeps cooking once you add the coconut milk and pumpkin pur&eacute;e, so letting it get too soft early on can leave you with mushy pieces by the end.<\/li>\n<li><strong>Adjust the consistency to your liking.<\/strong> I like my curry on the thicker side, so I only add &frac14; cup of vegetable broth at the end to loosen the sauce. If you prefer a thinner curry, stir in a little more broth until it reaches the consistency you like.<\/li>\n<li><strong>Bulk it up with some protein or extra veggies. <\/strong>This pumpkin curry is already plenty hearty, but it&rsquo;s also easy to add to. Add canned chickpeas (drained &amp; rinsed) or cooked <a href=\"https:\/\/www.budgetbytes.com\/shredded-chicken\/\">shredded chicken<\/a> (if you&rsquo;re not keeping the recipe vegan) at the end for some extra protein, or add veggies like bell peppers, carrots, spinach, or other greens. It&rsquo;s much easier to handle, and it makes getting those even &frac12;-inch cubes a lot simpler. All you need is a sturdy cutting board, a spoon, and a sharp chef&rsquo;s knife to get your pie pumpkin curry-ready!<\/p>\n<ol class=\"wp-block-list\">\n<li><strong>Halve and scoop:<\/strong> Carefully cut the pie pumpkin in half from top to bottom, starting just beside the stem. Scoop out the seeds and stringy pulp with a spoon. Save those <a href=\"https:\/\/www.budgetbytes.com\/how-to-make-roasted-pumpkin-seeds\/\">seeds for roasting<\/a> if you&rsquo;d like!<\/li>\n<li><strong>Trim and slice:<\/strong> Cut away the stem and the small piece at the bottom of each half. Place the pumpkin cut-side down on your cutting board so it sits nice and steady, then slice each half into roughly &frac12;-inch-wide wedges.<\/li>\n<li><strong>Peel the pumpkin: <\/strong>For this pumpkin curry, I remove the skin before cooking. Working with one wedge at a time makes this much easier than trying to peel the whole pumpkin at once. Use your chef&rsquo;s knife to carefully slice the skin away from each wedge.<\/li>\n<li><strong>Dice it small: <\/strong>Cut the peeled wedges into roughly &frac12;-inch cubes, like the ones shown in the photo here.
