I built the spice blend from what I had in the cupboard and tweaked it until it beat the packet. It has enough fat to bloom the spices and keep the meat tender, but not so much that the chili turns greasy. It\u2019s most important if you\u2019re using turkey or crumbles, which don\u2019t have much fat of their own.<\/li>\n<li><strong>Sweet onion<\/strong> \u2013 Cooks right in the pan with the beef, so it softens and picks up all that flavor. One large onion is plenty.<\/li>\n<li><strong>Garlic<\/strong> \u2013 Two fresh cloves. Goes in at the end of browning so it doesn\u2019t burn.<\/li>\n<li><strong>Crushed tomatoes<\/strong> \u2013 One 28-ounce can. Crushed tomatoes give you body and texture without big chunks.<\/li>\n<li><strong>Tomato paste<\/strong> \u2013 A whole 6-ounce can. This is what makes the chili rich and deep instead of thin and tomato-y.<\/li>\n<li><strong>Low sodium beef broth<\/strong> \u2013 Two cups. Low sodium lets you control the salt, since the soy sauce and tomatoes add plenty on their own.<\/li>\n<li><strong>Soy sauce<\/strong> \u2013 Two tablespoons. You won\u2019t taste soy sauce, but you\u2019ll notice the chili tastes meatier, more savory, and well rounded. You can swap in low sodium soy sauce or coconut aminos instead.<\/li>\n<li><strong>Red kidney beans<\/strong> \u2013 Two cans, drained. They hold their shape through the simmer and soak up the sauce.<\/li>\n<\/ul>\n<h3 id=\"h-homemade-chili-seasoning\" class=\"wp-block-heading\">Homemade Chili Seasoning<\/h3>\n<p class=\"wp-block-paragraph\">This is the blend that got me off seasoning packets for good. It\u2019s balanced, smoky, and not too hot, so everyone at the table can eat it. Two tablespoons.<\/li>\n<li><strong>Ground cumin<\/strong> \u2013 Earthy and warm. This is what makes chili taste like chili.<\/li>\n<li><strong>Smoked paprika<\/strong> \u2013 Adds a smoky, almost grilled flavor without any extra heat.<\/li>\n<li><strong>Garlic powder and onion powder<\/strong> \u2013 Backs up the fresh garlic and onion so the flavor runs all the way through.<\/li>\n<li><strong>Coarse kosher salt and black pepper<\/strong> \u2013 I use <a href=\"https:\/\/amzn.to\/4ib9OCv\">coarse kosher salt<\/a>. Start with a teaspoon and adjust at the end of the simmer.<\/li>\n<li><strong>Adobo sauce from a can of chipotle peppers (optional)<\/strong> \u2013 Two teaspoons of just the sauce, not the peppers. It adds a smoky heat that rounds everything out. Leave it out for a milder chili.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">If you keep a jar of my <a href=\"https:\/\/barefootinthepines.com\/all-purpose-mexican-spice-blend\/\">all-purpose Mexican spice blend<\/a> on hand, you\u2019ll be happy to know this chili seasoning is just as easy to make ahead.<\/p>\n<h3 id=\"h-the-best-ground-beef-for-chili\" class=\"wp-block-heading\">The Best Ground Beef for Chili<\/h3>\n<p class=\"wp-block-paragraph\">The fat percentage on the package matters more than most people think. Here\u2019s the quick breakdown:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>85\/15 (my pick)<\/strong> \u2013 Enough fat to carry the spices and keep the beef juicy, but it won\u2019t leave a layer of grease on top. This is what I use every time.<\/li>\n<li><strong>80\/20<\/strong> \u2013 More flavor, but noticeably greasier. If this is what you have, spoon off some of the fat after browning, before you add the onions.<\/li>\n<li><strong>90\/10 or 93\/7<\/strong> \u2013 Very lean. It works, but the texture is drier, and you\u2019ll need the olive oil to help the spices bloom.<\/li>\n<li><strong>Ground chuck<\/strong> \u2013 Usually 80\/20 and richer tasting. Treat it like 80\/20 and drain a little fat.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">Ground turkey (85\/15) is a great swap if you want a lighter chili. <\/p>\n<h2 id=\"h-how-to-make-homemade-chili\" class=\"wp-block-heading\">How to Make Homemade Chili<\/h2>\n<p class=\"wp-block-paragraph\"><strong>Step 1: <\/strong><\/p>\n<p class=\"wp-block-paragraph\">Heat the olive oil in a large pot or Dutch oven over medium high heat. Add the ground beef and break it up with a spoon. Cook for about 5 minutes until it\u2019s browned but not cooked through.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Step 2: <\/strong><\/p>\n<p class=\"wp-block-paragraph\">Stir in the diced onion and keep cooking for another 4 to 5 minutes. The beef should be cooked through and the onions soft. Cook for one minute, stirring the whole time. I don\u2019t, and this is the step that makes the biggest difference.<\/p>\n<p class=\"wp-block-paragraph\">When the seasoning hits the hot fat from the browned beef, the spices bloom. That means the flavor opens up and spreads through the whole pot instead of sitting on top or making the chili gritty. The onions cook right in that same fat, so they pick up the flavor too. One minute in the pan is all it takes.<\/p>\n<h2 id=\"h-tips-for-the-best-ground-beef-chili\" class=\"wp-block-heading\">Tips for the Best Ground Beef Chili<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Don\u2019t skip the simmer.<\/strong> Simmering makes the chili thicker and richer. Make sure to stir every so often so the bottom doesn\u2019t scorch.<\/li>\n<li><strong>Fix a thick chili with broth.<\/strong> If the chili gets thicker than you like, add beef broth a splash at a time until it loosens up.<\/li>\n<li><strong>Fix a thin chili with time.<\/strong> Keep simmering with the lid off. The liquid cooks down, and the chili thickens on its own.<\/li>\n<li><strong>Spoon off extra fat.<\/strong> If you used 80\/20 or ground chuck and see a lot of grease after browning, spoon some off before the onions go in.<\/li>\n<li><strong>Taste at the end, not the beginning.<\/strong> The chili concentrates as it simmers, so wait until it\u2019s done to adjust the salt.<\/li>\n<li><strong>Chili is better the next day.<\/strong> If you\u2019re cooking for game day, make it Saturday and reheat it Sunday. The flavors keep developing overnight.<\/li>\n<li><strong>Set up a topping bar.<\/strong> Shredded cheddar, sour cream, sliced jalape\u00f1os, chopped onion, and <a href=\"https:\/\/barefootinthepines.com\/4-ingredient-guacamole-recipe\/\">guacamole<\/a> let everyone build their own bowl.<\/li>\n<\/ul>\n<h2 id=\"h-variations-and-substitutions\" class=\"wp-block-heading\">Variations and Substitutions<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Ground turkey<\/strong> \u2013 Use 85\/15 and keep the olive oil. The chili will be lighter and just as flavorful.<\/li>\n<li><strong>Plant based crumbles<\/strong> \u2013 Swap them in one for one. They don\u2019t release fat, so the olive oil does the work of blooming the spices.<\/li>\n<li><strong>Different beans<\/strong> \u2013 Black beans, pinto beans, or a mix all work. Keep the total around two cans.<\/li>\n<li><strong>No beans<\/strong> \u2013 Leave them out for a meatier, Texas style chili. It thickens as it sits, so you may want a splash of beef broth when you reheat it.<\/p>\n<h3 id=\"h-freezing-chili\" class=\"wp-block-heading\">Freezing Chili<\/h3>\n<p class=\"wp-block-paragraph\">This chili freezes well for up to 2 months. Portion it into freezer safe containers or bags, leaving a little room at the top for it to expand. Thaw it overnight in the fridge before reheating.<\/p>\n<h3 id=\"h-reheating-chili\" class=\"wp-block-heading\">Reheating Chili<\/h3>\n<p class=\"wp-block-paragraph\">Reheat on low on the stovetop, stirring now and then, until warmed through. <\/p>\n<p class=\"wp-block-paragraph\">For game day, reheat it on LOW in the slow cooker and leave it there to keep warm.
