And you know that spicy, creamy sauce that comes on the side? We\u2019re obsessed with it. Well, tonight you get as much of it as you want, poured over a sheet pan of Greek feta fries buried under spiced <a href=\"https:\/\/girlcarnivore.com\/category\/lamb\/\">ground lamb<\/a>, and enough feta to justify the upcharge <em>had you ordered takeout<\/em>. Greek yogurt, harissa, lemon, garlic, olive oil. Ninety seconds in a bowl, and it\u2019s the main excuse to make these loaded fries. <\/p>\n<p class=\"wp-block-paragraph\">Your ground lamb browns in the skillet while the fries crisp in the oven, so the whole thing hits the table hot, not lukewarm and soggy from waiting for the delivery driver to arrive. Here is what to look for at the store.<\/p>\n<h3 id=\"h-for-the-fries\" class=\"wp-block-heading\">For the Fries<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Frozen steak fries or potato wedges:<\/strong> thick cuts hold up under wet toppings. Shoestring fries go limp before the platter reaches the table.<\/li>\n<li><strong>Olive oil:<\/strong> a light coat so the oregano sticks before baking.<\/li>\n<li><strong>Dried oregano:<\/strong> Greek oregano if you can find it. It is more floral than the Italian jars.<\/li>\n<li><strong>Sea salt and black pepper:<\/strong> held back until the fries come out of the oven.<\/li>\n<\/ul>\n<h3 id=\"h-for-the-spiced-ground-lamb\" class=\"wp-block-heading\">For the Spiced Ground Lamb<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Ground lamb:<\/strong> 80\/20 or thereabouts, the same grind we use for <a href=\"https:\/\/girlcarnivore.com\/gyro-smash-burgers\/\">gyro smash burgers<\/a>. Very lean grinds brown poorly and taste flat. Our breakdown of <a href=\"https:\/\/girlcarnivore.com\/how-lamb-cuts-compare-to-beef-cuts\/\">how lamb cuts compare to beef cuts<\/a> covers why fat percentage matters more with lamb.<\/li>\n<li><strong>Red onion:<\/strong> finely chopped so it cooks down into the meat instead of sitting on top of it.<\/li>\n<li><strong>Garlic:<\/strong> fresh cloves, minced.<\/li>\n<li><strong>Dried oregano, cumin, coriander, thyme, and rosemary:<\/strong> the backbone of the spice blend.<\/li>\n<li><strong>Ground cinnamon:<\/strong> a small amount. It reads as warmth, not as dessert.<\/li>\n<li><strong>Tomato paste:<\/strong> concentrates the savory edge and helps the spices cling to the meat.<\/li>\n<\/ul>\n<h3 id=\"h-for-the-harissa-yogurt-sauce\" class=\"wp-block-heading\">For the Harissa Yogurt Sauce<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Whole milk Greek yogurt:<\/strong> full fat only. Low fat splits and runs off the fries.<\/li>\n<li><strong>Harissa:<\/strong> heat levels swing hard between brands, so taste yours before you commit to the full spoonful.<\/li>\n<li><strong>Lemon:<\/strong> zest and juice both go in the sauce, and the rest gets cut into wedges for the table.<\/li>\n<li><strong>Garlic and extra virgin olive oil:<\/strong> raw garlic keeps the sauce sharp against the rich lamb. Same principle as our <a href=\"https:\/\/girlcarnivore.com\/raita-recipe\/\">cucumber yogurt raita<\/a>, just built for heat instead of cooling.<\/li>\n<\/ul>\n<h3 id=\"h-for-the-toppings\" class=\"wp-block-heading\">For the Toppings<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Feta:<\/strong> buy the block in brine and crumble it yourself. Pre-crumbled is dry and chalky.<\/li>\n<li><strong>Tomato:<\/strong> diced and drained of excess seed jelly.<\/li>\n<li><strong>Red onion and parsley:<\/strong> sliced thin and roughly chopped.<\/li>\n<li><strong>Aleppo pepper or red pepper flakes:<\/strong> for the last sprinkle over the sauce.<\/li>\n<\/ul>\n<h3 id=\"h-equipment\" class=\"wp-block-heading\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Large rimmed sheet pan:<\/strong> the fries need a single layer. Two pans beat one crowded pan every time.<\/li>\n<li><strong>Large skillet:<\/strong> wide enough that the lamb spreads thin and browns instead of steaming. Cast iron or stainless both work.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"h-how-to-make-greek-feta-fries\" class=\"wp-block-heading\">\ud83d\udcdd How to Make Greek Feta Fries<\/h2>\n<ol class=\"wp-block-list\">\n<li>Heat the oven to the temperature listed on the fry package, usually 425 to 450\u00b0F.<\/li>\n<li>Toss the fries with olive oil and dried oregano until lightly and evenly coated, then spread them in <strong>a single layer<\/strong> on a large rimmed sheet pan. Bake per the package, about 20 to 35 minutes, until the edges are deep golden and a fry feels rigid when you lift it with tongs.<\/li>\n<li>While the fries bake, whisk the Greek yogurt, harissa, lemon juice, lemon zest, olive oil, garlic, and salt until smooth. Add water a teaspoon at a time until it <strong>pours in a ribbon but still coats the back of a spoon<\/strong>. Refrigerate until serving.<\/li>\n<li>Heat the olive oil in a large skillet over medium high heat. Add the ground lamb and press it flat across the pan. <strong>Leave it alone for about 3 minutes<\/strong>, until the underside is deep brown and lifts away without tearing.<\/li>\n<li>Break the lamb into small pieces and cook another 2 to 3 minutes, until browned on most surfaces. Spoon off the excess rendered fat, leaving a thin glossy coating behind so the onion and spices have something to cook in.<\/li>\n<li>Add the red onion and cook 3 to 4 minutes, until softened and just starting to color at the edges.<\/li>\n<li>Add the garlic, oregano, cumin, coriander, thyme, rosemary, cinnamon, salt, and pepper. Stir constantly for about 30 seconds, until the spices darken a shade and the garlic smells sweet rather than raw.<\/li>\n<li>Add the tomato paste and cook about 1 minute, until it deepens to brick red and coats the meat.<\/li>\n<li>Add the water and scrape the browned bits off the bottom of the pan. Cook 1 to 2 minutes, until the liquid has evaporated and the lamb looks glossy with <strong>no liquid pooling in the skillet<\/strong>.<\/li>\n<li>Sprinkle the hot fries with the salt and pepper the moment they come out of the oven and toss. The surface oil is still hot, which is what makes the seasoning stick.<\/li>\n<li>Pile the fries onto a large platter or leave them right on the sheet pan. An 80\/20 chuck grind browns closest to lamb.<\/li>\n<li><strong>Sriracha or chili crisp for the harissa:<\/strong> both give you heat in the yogurt, though you lose the smoky caraway note harissa brings. Start with half and taste.<\/li>\n<li><strong>Fresh oregano for dried:<\/strong> use roughly three times the amount and add it to the lamb at the very end, off the heat, so it stays green.<\/li>\n<li><strong>Diced cucumber alongside the tomato:<\/strong> more crunch and freshness. Pat it dry first so the extra moisture does not collect under the fries.<\/li>\n<li><strong>Homemade oven fries for frozen:<\/strong> cut russets into thick wedges, toss in oil, and roast at 425\u00b0F for 35 to 40 minutes, flipping once. Skip the extra oregano toss since they season better while raw.<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 id=\"h-meat-nerd-tips\" class=\"wp-block-heading block-tip__title\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Check the fries before you salt them.<\/strong> Plenty of frozen brands come heavily seasoned already. Taste one out of the oven before you add the full amount of salt or the feta will push it over the edge.<\/li>\n<li><strong>Do not stir the lamb early.<\/strong> Constant stirring keeps the meat from holding contact with the hot pan, and you end up with gray, steamed crumbles instead of browned edges. Press it flat, walk away, then break it up.<\/li>\n<li><strong>Leave a little of the rendered fat.<\/strong> Pour off the excess, not all of it. That thin film is what carries the cumin, coriander, and cinnamon through the whole skillet.<\/li>\n<li><strong>Squeeze the lemon wedges over the platter at the table.<\/strong> Fresh acid on top of hot lamb and cold yogurt is what keeps a rich plate from feeling heavy halfway through.<\/li>\n<li><strong>Prep everything before the fries go in.<\/strong> Sauce whisked, toppings chopped, lamb cooked and warm. The potatoes pull moisture from the lamb, yogurt, and tomato within minutes and go soft. Break it down instead.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Spiced lamb:<\/strong> airtight container in the fridge up to 4 days, or frozen up to 3 months. Reheat in a dry skillet over medium until sizzling, about 4 minutes.<\/li>\n<li><strong>Harissa yogurt sauce:<\/strong> airtight in the fridge up to 5 days. It thickens as it sits, so loosen it with a splash of water and whisk before serving.<\/li>\n<li><strong>Chopped toppings:<\/strong> separate containers, up to 2 days. Store the tomato uncovered on a paper towel so it does not weep.<\/li>\n<li><strong>Fries:<\/strong> best made fresh. If you have plain baked fries left, re-crisp them on a sheet pan at 425\u00b0F for 6 to 8 minutes rather than in the microwave.<\/li>\n<li><strong>The real move:<\/strong> cook a double batch of the lamb and sauce on purpose.
