That\u2019s why we\u2019ll buy <\/span><i><span data-contrast=\"auto\">Nestl\u00e9<\/span><\/i><span data-contrast=\"auto\"> for home, grab <\/span><i><span data-contrast=\"auto\">McCafe<\/span><\/i><span data-contrast=\"auto\"> on our way into work, but we expect luxury from what we\u2019re sitting down to enjoy in local coffee shops: they fulfill different needs. But, in Canada, we can\u2019t grow coffee beans, so the prices we pay are direct reflections of production struggles in (sub)tropical regions like <\/span><a href=\"https:\/\/saifood.ca\/smallholder-coffee-brazil\/\"><span data-contrast=\"none\">Brazil<\/span><\/a><span data-contrast=\"auto\">, Kenya, and Liberia. Production complications, like the <\/span><a href=\"https:\/\/globalnews.ca\/news\/11648957\/coffee-prices-inflation-explained\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">extreme climate sensitivity<\/span><\/a><span data-contrast=\"auto\"> of coffee beans that leads to disease potential and reduced yields, the risks to soil quality that <\/span><a href=\"https:\/\/www.zmescience.com\/science\/news-science\/your-morning-coffee-keeps-getting-more-expensive-heres-why\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">threaten the long-term productivity<\/span><\/a><span data-contrast=\"auto\"> of coffee fields, and a variety of global supply chain stalls are directly behind increased global attention to resiliency and improved production capacity.<\/span><span data-ccp-props=\"{\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">It is common for policy to move only after some shock necessitates action. Despite changes to the cost per cup, <\/span><a href=\"https:\/\/www.statcan.gc.ca\/o1\/en\/plus\/8518-its-costing-you-latte-more-cup-coffee-lately-and-heres-why\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">coffee prices are increasing slower<\/span><\/a><span data-contrast=\"auto\"> than other food prices meaning we don\u2019t notice the difference until analyses tell us to pay attention. The <\/span><a href=\"https:\/\/www.statcan.gc.ca\/o1\/en\/plus\/8518-its-costing-you-latte-more-cup-coffee-lately-and-heres-why\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">majority of coffee imported<\/span><\/a><span data-contrast=\"auto\"> into Canada is unprocessed or unroasted, coming directly from the country it is grown but when countries our supply chains rely on are targeted, as was the case in 2025 when the United States <\/span><a href=\"https:\/\/www.theguardian.com\/us-news\/2025\/aug\/16\/coffee-shops-brazil-trump-tariffs\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">temporarily added tariffs<\/span><\/a><span data-contrast=\"auto\"> on the roasted coffee they export, Canadians notice the price jump. The diversity in the coffee sector further <\/span><a href=\"https:\/\/www.bbc.com\/news\/articles\/cr5pp1m6z06o\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">cushions Canadians<\/span><\/a><span data-contrast=\"auto\"> from consumption-reducing price increases because it means we never face real scarcity; we just <\/span><a href=\"https:\/\/perfectdailygrind.com\/2025\/09\/coffee-producers-innovation-processing\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">switch our source<\/span><\/a><span data-contrast=\"auto\">. For example, maybe our trips to Tim Hortons become less frequent but we don\u2019t change the quantity of coffee consumed, or maybe the price is high enough that we step back from the Keurig for a while to buy ground coffee in bulk.\u00a0<\/span><span data-ccp-props=\"{\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">We, as consumers, have a variety of coffee sources because the coffee industry invests in its own innovation. In Canada, our coffee segments are focused on convenience, which is why we are seeing an increase the availability of <\/span><a href=\"https:\/\/www.gcrmag.com\/whats-driving-coffee-market-consolidation\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">cold coffees<\/span><\/a><span data-contrast=\"auto\"> and <\/span><a href=\"https:\/\/www.foodincanada.com\/food-business\/mother-parkers-now-offers-coffee-extract-solutions-164114\/?custnum=1138258609&amp;title=Mother+Parkers+now+offers+coffee+extract+solutions&amp;utm_source=FIC&amp;utm_medium=email&amp;utm_campaign=ANXCD260725002&amp;oly_enc_id=3325J1647990F8H\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">domestic extracts<\/span><\/a><span data-contrast=\"auto\">. Further, green bean trading occurs <\/span><a href=\"https:\/\/www.gcrmag.com\/whats-driving-coffee-market-consolidation\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">near zero<\/span><\/a><span data-contrast=\"auto\"> and <\/span><a href=\"https:\/\/perfectdailygrind.com\/2025\/09\/coffee-producers-innovation-processing\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">input costs are rising<\/span><\/a><span data-contrast=\"auto\"> making it very difficult for especially small farmers or companies to make a profit and subsequently fund innovation. For this reason, large companies are more likely to <\/span><a href=\"https:\/\/www.gcrmag.com\/whats-driving-coffee-market-consolidation\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">absorb the competition<\/span><\/a><span data-contrast=\"auto\"> (i.e. consolidate the marketplace) than experiment themselves. Approximately <\/span><a href=\"https:\/\/perfectdailygrind.com\/2025\/09\/coffee-producers-innovation-processing\/\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">60 per cent of the final quality<\/span><\/a><span data-contrast=\"auto\"> we experience in our coffee cups is the result of processing (i.e. grinding, flavouring, roasting), implying that experimentation is entirely possible in countries that are not growing the beans. However, the ability to successfully scale those innovations is dependent on local capacity, as was the case with Gregg\u2019s ceasing operations in New Zealand, specifically citing an inhospitable manufacturing environment for its <\/span><a href=\"https:\/\/www.stuff.co.nz\/nz-news\/361011541\/last-cup-special-blendgreggs-instant-coffee-coming-store-near-you\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">factory closure in August 2026<\/span><\/a><span data-contrast=\"auto\">.<\/span><\/p>\n<\/div>\n\n","protected":false},"excerpt":{"rendered":"<p>The nature of the coffee market is such that few companies can diversify how they participate.
