Celebrating Joshua\u2019s College Graduation! We had a small get-together with family for such a special occasion. I prepared some of my family\u2019s favorites.\u00a0<\/p>\n

Life moves too quickly for our liking. It seems that Joshua started college just yesterday, and now, 3 years later, at just 20 years old, he graduated with a BA in Psychology and a minor in Legal Studies with a 4.0 GPA!<\/p>\n

He is now moving on to the next chapter of his life\u2014Law School for another three years.<\/p>\n

\u00a0<\/p>\n

We are overjoyed with all of Joshua\u2019s achievements!<\/p>\n

I\u2019m a proud Mom!<\/h2>\n

I\u2019ve homeschooled Josh from his early years until 3rd grade. By age 5, he could read\/write and add 3-digit numbers in his head. We instilled in Josh the love of learning and logical\/critical thinking early on.\u00a0<\/p>\n

Phi Beta Kappa HONOR Society<\/h2>\n

We are Celebrating Josh\u2019s induction into Phi Beta Kappa Society, the highest honor society you can be inducted into!<\/p>\n

You have to have at least a 3.7+ GPA and be selected by professors at the college, along with several other requirements. Josh has a 4.0 GPA! Only a small group of 30 students were selected this year, and Josh was one of them. We are so incredibly proud of him!<\/p>\n<\/div>\n

Phi Beta Kappa<\/h2>\n

\u2013 The oldest and most prestigious academic honor society in the United States. Members include 17 US Presidents, 42 Supreme Court Justices, and more than 150 Nobel Laureates.<\/p>\n

Special dinner<\/h2>\n

I usually spend a day brainstorming and narrowing down my very long menu plan.<\/p>\n

\u00a0<\/p>\n

Murphy\u2019s laws<\/strong> always come in handy.<\/p>\n

\u00a0<\/p>\n

Nothing is as easy as it looks. Everything takes longer than you think. Anything that can go wrong will go wrong<\/strong>.\u00a0<\/p>\n

I had a long menu plan, but since I only had one day to prepare, I had to reduce it to a manageable work menu.<\/p>\n

\u00a0<\/p>\n

Before every special occasion, we shop at Costco, where I can find all of the ingredients that I need!<\/p>\n

\u00a0<\/p>\n

My mother-in-law\u2019s favorite and I always try to have it on my table, is the young boiled potatoes with sunflower oil, garlic, dill, and Seledka (Herrings) from the European market.<\/p>\n

I have made a simple salad<\/strong> with tomatoes, cucumbers, marinated onions, and carrots, seasoned with my favorite Za\u2019atar seasoning and Olive oil.\u00a0\u00a0<\/p>\n

Smoked Salmon sandwiches<\/strong> with cream cheese, smoked salmon, tomatoes, and cucumbers.<\/p>\n

As usual, all of the ingredients are from Costco. I love their bread, smoked salmon, and produce!<\/p>\n

We buy head-on shrimp<\/strong> at Costco every single time! They taste completely different, much more tender and flavorful than shrimp without the heads.\u00a0<\/p>\n

You can bake them in the oven for 10 minutes at 400F, sprinkled with garlic powder, paprika, and Italian spices.<\/p>\n

\u00a0<\/p>\n

Creamy Parmesan Shrimp Pasta<\/strong> is my family\u2019s absolute favorite! I will write a separate post for this incredible recipe!<\/p>\n

This Instant Pot Lamb and Rice (Plov)<\/strong> is made with seared lamb, carrots, garlic, and spices to elevate the flavors to new and delicious levels. The best part is that it\u2019s cooked in one Big pot!<\/p>\n

Another favorite from Costco is the Kirkland Signature Five Cheese Tortelloni<\/strong> with Parmigiano Reggiano and RAO\u2019s Marinara sauce.<\/strong> It\u2019s sprinkled with grated Parmesan and home-grown\u00a0basil!<\/p>\n

To finish off dinner and save my time, we decided to try Costco\u2019s Lemon Blueberry Loaf<\/strong> and Chocolate-Dipped strawberries<\/strong>, which\u00a0we all enjoyed!\u00a0<\/p>\n

My family always appreciates my effort! I was able to pack food for our son and my in-laws to go.\u00a0<\/p>\n<\/div>\n
