Since then, it\u2019s a staple. Six ingredients, one skillet, 20 minutes, and you\u2019re ready for dinner. <\/p>\n<p class=\"wp-block-paragraph\">The thing we always stress is don\u2019t rush the preheat. If the pan\u2019s not hot enough, the garlic will seize instead of blooming, and the whole thing will land flat and slightly bitter. Thin chops overcook before the crust has time to develop. As always, if you can find it, we love and use <a href=\"https:\/\/freedomrunfarm.org\/\">Freedom Run Farm American lamb<\/a> for the absolutely best flavor. <\/li>\n<li><strong>Olive oil<\/strong><\/li>\n<li><strong>Garlic cloves:<\/strong> Fresh, minced fine. Jarred pre-minced has too much moisture and does not behave the same way in a screaming-hot pan.<\/li>\n<li><strong>Dried oregano:<\/strong> Greek oregano, if you can find it. More pungent and herbal than standard supermarket oregano, and worth keeping in the spice drawer for anything in this flavor family.<\/li>\n<li><strong>Sumac:<\/strong> The ingredient that makes these distinctly Greek. Deep red, fruity, tannic, with a citrus tang that blooms in pan fat and builds a crust you cannot replicate with anything else. Find it at Middle Eastern grocery stores or order online. Do not skip it.<\/li>\n<li><strong>Lemon zest<\/strong> &amp; <strong>Fresh lemon juice<\/strong><\/li>\n<li><strong>Kosher salt and black pepper<\/strong><\/li>\n<li><strong>Fresh oregano:<\/strong> For garnish. Optional, but it looks and smells like you know what you are doing.<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Cast iron skillet (10 to 12 inch):<\/strong> Non-negotiable for the crust this recipe depends on. Stainless steel also works. Nonstick will not get hot enough.<\/li>\n<li><strong>Instant-read thermometer:<\/strong> Not optional. Lamb loin chops are thin enough that 30 extra seconds on the heat matters.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-greek-pan-seared-lamb-loin-chops\">\ud83d\udcdd How to Make Greek Pan-Seared Lamb Loin Chops<\/h2>\n<ol class=\"wp-block-list\">\n<li><strong>Pat the lamb loin chops completely dry<\/strong> with paper towels \u2014 every side, pressed and turned until the paper comes away clean. Surface moisture turns to steam in the pan, and you lose the crust before it starts.<\/li>\n<li>In a small bowl, combine olive oil, minced garlic, dried oregano, sumac, lemon zest, kosher salt, and black pepper. Mix until a loose paste forms.<\/li>\n<li>Coat both sides of the chops evenly with the seasoning paste. <strong>Rest at room temperature for 15 to 20 minutes.<\/strong> Cold chops straight from the fridge cook unevenly through the center.<\/li>\n<li><strong>Heat a cast iron skillet over medium-high heat until smoking,<\/strong> 3 to 5 minutes. The pan needs to be fully preheated or the chops will stick, steam, and lose the crust you just built.<\/li>\n<li>Place chops in the skillet without crowding. <strong>Sear undisturbed for 3 to 4 minutes<\/strong> until a deep golden-brown crust forms and the chops release cleanly from the pan. Flip and sear the second side for 3 to 4 minutes. For chops over 1 inch thick, add 1 minute per side.<\/li>\n<li><strong>Pull at 130\u00b0F internal for medium-rare<\/strong> (carryover brings it to 135\u00b0F during rest) or 140\u00b0F for medium. Reduce cook time to 2 to 3 minutes per side. The flavor profile is nearly identical, but rib chops are more delicate and overcook faster if you walk away.<\/li>\n<li><strong>Sumac for extra lemon:<\/strong> Use 1 teaspoon of additional lemon zest plus a small squeeze of juice. You lose the fruity, tannic depth that sumac adds; the dish reads brighter but less layered and less distinctly Greek.<\/li>\n<li><strong>Dried oregano for fresh (in the paste):<\/strong> Use 1 teaspoon dried per tablespoon fresh. Works well here since the oregano goes into the sear. Fresh oregano as garnish is extra, not a swap for what is in the paste.<\/li>\n<li><strong>Olive oil for avocado oil:<\/strong> Same behavior in the pan, slightly more neutral in flavor. Not a downgrade.<\/li>\n<li><strong>Lamb loin chops for lamb shoulder chops:<\/strong> Shoulder chops are fattier and tougher. They need 5 to 6 minutes per side or a quick braise to finish. The high-heat crust method here does not fully compensate for the texture difference in shoulder cuts.<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-meat-nerd-tips\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>The garlic burns fast.<\/strong> If you see the minced garlic going dark before the crust is set, reduce heat slightly. Burned garlic turns bitter and will dominate the entire dish over the sumac and lemon.<\/li>\n<li><strong>The seasoning rest is not decorative.<\/strong> Even 15 minutes at room temperature lets the paste penetrate slightly and the surface dry enough that the crust forms faster the moment it hits the pan.<\/li>\n<li><strong>Read the thermometer away from the bone.<\/strong> Bone-in chops register different temperatures near the bone. Probe the thickest part of the meat only.<\/li>\n<li><strong>These are best eaten immediately.<\/strong> The crust softens quickly off the heat.
