The grilled pineapple halves come to the table loaded with an insanely good sticky soy-honey chicken filling, and before anyone picks up a fork, someone is already asking for the recipe. The extra little bit of fat holds up to a hard sear and stays juicy after getting tossed in the stir-fry. Breasts work but need more attention.<\/li>\n<li><strong>Soy sauce<\/strong><\/li>\n<li><strong>Honey<\/strong><\/li>\n<li><strong>Sesame oil:<\/strong> Gives the marinade its nutty backbone. Do not swap it for neutral oil and expect the same result.<\/li>\n<li><strong>Garlic<\/strong><\/li>\n<li><strong>Fresh ginger:<\/strong> Optional but recommended. It cuts through the sweetness and keeps the marinade from being one-note.<\/li>\n<li><strong>Lime:<\/strong> Just the juice. Keeps the marinade from tasting flat.<\/li>\n<li><strong>Kosher salt and black pepper<\/strong><\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For the Rice:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Jasmine rice:<\/strong> Better here than basmati. The slightly stickier texture holds together in the stir-fry instead of turning the bowl into loose scatter.<\/li>\n<li><strong>Chicken broth<\/strong><\/li>\n<li><strong>Coconut oil:<\/strong> Adds a faint coconut note that ties back to the tropical angle without overpowering anything.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>Stir-Fry Add-ins:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Red bell pepper:<\/strong> Diced. You want some snap left in it after the stir-fry, not fully softened.<\/li>\n<li><strong>Red onion:<\/strong> Sliced thin. Softens fast at high heat.<\/li>\n<li><strong>Frozen edamame (or peas):<\/strong> Edamame is the better call for texture. Peas go soft fast at high heat; if using peas, add them off heat at the very end.<\/li>\n<li><strong>Green onions:<\/strong> Sliced thin, go in last so they stay bright.<\/li>\n<li><strong>Chili flakes:<\/strong> Optional but they cut through the sweetness and keep the dish from cloying.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>Garnish:<\/strong> Fresh cilantro, toasted sesame seeds, extra grilled pineapple chunks, lime wedges.<\/p>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Grill:<\/strong> Charcoal or gas set to medium heat (375-400\u00b0F). A cast-iron grill pan on the stovetop works for the pineapple step when cooking indoors.<\/li>\n<li><strong>Large skillet or wok:<\/strong> For the stir-fry. Cast iron or stainless steel over high heat gives better browning than nonstick.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-grilled-pineapple-chicken-and-rice\">\ud83d\udcdd\u00a0How to Make Grilled Pineapple Chicken and Rice<\/h2>\n<ol class=\"wp-block-list\">\n<li>Preheat grill to medium (375-400\u00b0F). Brush the cut face of each pineapple half with olive oil and season with a pinch of kosher salt.<\/li>\n<li>Place the pineapple halves, cut-side down, directly on the grates. Two batches is faster than it sounds and the result is completely different.<\/li>\n<li><strong>Grilled pineapple boats can be prepped a day ahead.<\/strong> Store them cut-side down on a lined sheet pan in the fridge. Reheat on the grill for 2-3 minutes before filling, or serve at room temperature. The boats hold their structure well overnight.<\/li>\n<li><strong>Rinse the jasmine rice until the water runs mostly clear.<\/strong> Surface starch is what makes rice gummy and resistant to tossing in a stir-fry. Most people skip this.
