Traditionally cooked in mustard oil, this simple Bengali fried eggplant has a distinctive aroma and savory flavor that pairs especially well with rice and dal.

Begun means eggplant or brinjal in Bengali, while bhaja means fried. Some use only turmeric and salt, while others add chili powder or a small amount of sugar. Long or slender varieties work particularly well because they produce attractive slices and cook evenly.

You can also use globe eggplant if that’s what you have available.

Turmeric

Ground turmeric gives the eggplant its characteristic golden color and earthy flavor.

Red Chili Powder

A small amount of chili powder adds gentle heat. Kashmiri chili powder is a good option if you want color without making the Begun Bhaja particularly spicy.

Salt

Salt seasons the eggplant and brings out its natural flavor.

Mustard Oil

For a traditional Bengali flavor, mustard oil is the key ingredient. It has a stronger flavor than neutral cooking oils, but that pungent aroma is part of what makes authentic-style Bengali Begun Bhaja so distinctive.

Optional Rice Flour

A light dusting of rice flour can help create a crispier exterior. It isn’t essential, though. Traditional Begun Bhaja can be made without flour.

Prepping the Eggplant

The classic style of slicing the eggplant for Begun Bhaja is to slice it into 1.5 cm thick circles. If the eggplant is too big, you can ofcourse make it semicircle.

Layer the sliced eggplant on a colander and sprinkle it with little salt and sugar. The sugar and sugar will soften the texture of the eggplant as it will release the moisture. It will also season the eggplant. Place the colander on a plate.

Leave it aside for 30 minutes and you will notice a lot of water got collected on the plate.

How to Make Begun Bhaja

1- Slice the eggplant – Wash and dry the eggplant well. Too many slices at once can lower the temperature of the oil and prevent the eggplant from browning properly.

Use enough oil – Eggplant is very absorbent. If the pan becomes completely dry while cooking, add a little more oil rather than allowing the slices to scorch.

Keep the heat moderate – High heat can brown the outside before the eggplant has softened. Medium to medium-high heat generally gives you better control.

Add rice flour for extra crispiness – For a slightly crispier eggplant fry, lightly dust the seasoned slices with rice flour before frying. Long or slender eggplants are particularly convenient because they produce uniform slices, but globe eggplant can also be used.

Why is my Begun Bhaja absorbing so much oil?

Eggplant naturally absorbs oil. Using a properly heated pan, avoiding excessively low heat, and frying the slices in batches can help prevent them from becoming overly greasy.

Why is my eggplant crispy outside but raw inside?

The slices may be too thick or the cooking temperature may be too high. Reduce the heat slightly and allow the eggplant to cook through before the exterior becomes too dark.

Should I soak eggplant before making Begun Bhaja?

You don’t have to.
