This is the <strong>lamb leg steak<\/strong>, and it\u2019s a cut begging to be used for quick weeknight dinners. Cross-cut from the leg, they\u2019re bold, they\u2019re cheap, and in a screaming cast iron skillet they\u2019re done in twenty-five minutes. Freedom Run Farm is basically the only producer that we\u2019ve seen putting them out and if you\u2019re lucky enough to live in the Midwest, we\u2019ve seen them stocked at Fresh Thyme Market. But if you\u2019re here, you\u2019re in the right place for learning to cook <a href=\"https:\/\/girlcarnivore.com\/category\/lamb\/\" type=\"category\" id=\"138\">lamb recipes<\/a> as we\u2019ve been taking on every method possible. <\/p>\n<p class=\"wp-block-paragraph\">The mistake everyone makes is pulling pan-seared lamb leg steaks at 130\u00b0F like they\u2019re a ribeye. This cut doesn\u2019t have the intramuscular fat to carry that; instead, it\u2019s a little tougher. The one producer we\u2019ve consistently seen cutting them is <a href=\"https:\/\/freedomrunfarm.com\">Freedom Run Farm<\/a>; order directly or check a Fresh Thyme Market if you\u2019re in the Midwest. At least 3\/4 inch thick \u2014 anything thinner overcooks before you build a crust.<\/li>\n<li><strong>Olive oil<\/strong><\/li>\n<li><strong>Garlic cloves, minced<\/strong><\/li>\n<li><strong>Ground cumin<\/strong><\/li>\n<li><strong>Kosher salt<\/strong> &amp; <strong>Black pepper<\/strong><\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-for-the-mint-gremolata\">For the Mint Gremolata<\/h3>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<ul class=\"wp-block-list\">\n<li><strong>Fresh mint, finely chopped:<\/strong> Fresh only. Dried mint at this volume tastes like toothpaste.<\/li>\n<li><strong>Fresh parsley, finely chopped:<\/strong> Flat-leaf has more flavor than curly. Either works.<\/li>\n<li><strong>Lemon zest:<\/strong> One whole lemon, zested fresh. The aromatics in pre-zested lemon are mostly gone before you open the container.<\/li>\n<li><strong>Lemon juice:<\/strong> Squeezed right before you mix. The acid is doing the heavy lifting here \u2013 it cuts through the fat and wakes up the herbs.<\/li>\n<li><strong>Garlic clove, minced:<\/strong> One. This isn\u2019t a garlic sauce.<\/li>\n<li><strong>Olive oil:<\/strong> Binds it and carries the flavor into the meat on contact.<\/li>\n<li><strong>Kosher salt<\/strong> &amp; <strong>Black pepper<\/strong><\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><strong>Cast iron skillet:<\/strong> The pan has to hold heat when cold meat hits it. Cast iron does. Carbon steel does. Stainless steel is a distant third. Non-stick won\u2019t sear \u2014 skip it.<\/li>\n<li><strong>Instant-read thermometer:<\/strong> The window between perfect and overdone on a lean cut is about 10 degrees. Use the thermometer.<\/li>\n<li><strong>Small food processor:<\/strong> Makes the gremolata cohesive in 30 seconds. A sharp knife works too \u2014 it\u2019ll just take a couple extra minutes and be a little more rustic.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-pan-seared-lamb-leg-steaks\">\ud83d\udcdd How to Make Pan Seared Lamb Leg Steaks<\/h2>\n<ol class=\"wp-block-list\">\n<li>Pull the steaks from the fridge 20\u201330 minutes before cooking. Cold meat in a hot pan stalls the sear and costs you crust.<\/li>\n<li><strong>Pat the steaks completely dry.<\/strong> Paper towels, both sides, no moisture left on the surface. This is not optional.<\/li>\n<li>Mix olive oil, garlic, cumin, kosher salt, and pepper. Rub it on both sides and let the steaks sit while the pan comes to temperature.<\/li>\n<li><strong>Heat the cast iron over medium-high for at least 3 minutes<\/strong> \u2014 it should be hot enough that a drop of water evaporates on contact immediately. The rub has enough oil; don\u2019t add more to the pan.<\/li>\n<li>Lay the steaks in without crowding. Cook 3\u20135 minutes per side depending on thickness. You\u2019re looking for a deep brown crust and fat at the edges that\u2019s starting to render and char. Don\u2019t move them around \u2014 let the crust form and release on its own. For steaks over 1 inch thick, finish in a 400\u00b0F oven after searing both sides.<\/li>\n<li><strong>Pull at 150\u00b0F.<\/strong> Carryover heat during the rest brings them to 155\u2013160\u00b0F. Transfer to a cutting board, tent loosely, and leave them alone for 5 minutes minimum.<\/li>\n<li>While the lamb rests, pulse mint, parsley, lemon zest, lemon juice, garlic, olive oil, salt, and pepper in the food processor until roughly chopped and holding together. Taste it \u2014 it should be bright and a little sharp. Adjust salt if needed.<\/li>\n<li>Spoon the gremolata over the steaks while they\u2019re still warm. Squeeze a little fresh lemon over everything. The shoulder has more marbling so it stays juicy at lower temps. Same pan, same method, less precision required. You get char marks instead of a full crust, and you lose some of the rendered fat effect from the skillet. Still good. The gremolata works on them too, but the eating experience is different \u2014 less assertive, easier cook window. If you can\u2019t get fresh mint, drop it entirely and double the parsley \u2013 you get a cleaner herby flavor that still works.<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-meat-nerd-tips\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Medium is not a compromise on this cut \u2014 it\u2019s the target.<\/strong> I know everything in your instincts says pull lamb at medium-rare. For shoulder chops, yes. For leg steaks, no. The fat pocket near the bone stays waxy and unpleasant at 130\u00b0F. At 155\u2013160\u00b0F it renders into the meat. Cook one batch underdone and one right, and you\u2019ll never go back to medium-rare on this cut.<\/li>\n<li><strong>The cumin isn\u2019t optional.<\/strong> I\u2019ve tested this with and without it. Without the cumin, the rub is fine\u2026 salt, pepper, garlic. With it, the flavors pop.<\/li>\n<li><strong>Two steaks max per 10-inch skillet.<\/strong> Three steaks in that pan and you\u2019re steaming, not searing. The temperature drops, the moisture can\u2019t escape, and you lose the crust entirely. If you\u2019re cooking for four, do two batches and hold the first in a 200\u00b0F oven.<\/li>\n<li><strong>Make the gremolata while the meat rests, not before.<\/strong> We\u2019ve made it 30 minutes ahead and refrigerated it. The mint goes dull, and the lemon gets lost. Crispy smashed potatoes are the best vehicle I\u2019ve found for that.<\/li>\n<li><strong>Asparagus and couscous<\/strong>: The perfect easy sides to round out this meal.<\/li>\n<li><strong>Tzatziki:<\/strong> Serve it cold on the side. The cool yogurt against the hot lamb fat is a better contrast than anything else on the table, and it extends the herb story without doubling down on mint.<\/li>\n<li><strong>Simple cucumber and feta salad dressed with lemon:<\/strong> the perfect light and fresh bite to pair with this.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-leftovers-and-storage\">\ud83e\uddca Leftovers and Storage<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Refrigerate:<\/strong> Airtight container, up to 3 days. Store any leftover gremolata separately.<\/li>\n<li><strong>Freeze:<\/strong> Slice first, wrap tight in plastic then foil, freeze up to 2 months. Don\u2019t freeze the gremolata,  make it fresh.<\/li>\n<li><strong>Reheat:<\/strong> Thin slices in a hot cast iron pan for about 60\u201390 seconds per side. Just enough to warm through without cooking further. Microwave turns the surface rubbery and the meat chewy.<\/li>\n<li><strong>Leftover move:<\/strong> Cold sliced lamb on flatbread with hummus and whatever gremolata survived.
