You can use a different protein. You can add an extra egg. You can make it with rice you cooked specifically for the recipe or give leftover rice a second life.<\/p>\n<p>And because everything cooks in one skillet after the rice is ready, cleanup stays pretty manageable too.<\/p>\n<p>One thing I\u2019ve learned from years of meal prepping is that budget-friendly cooking gets much easier when you stop thinking every meal needs its own unique set of ingredients. Recipes like fried rice are useful because they help you use what you already have instead of buying six new things for one lunch.<\/p>\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Ingredients\"\/>Ingredients<span class=\"ez-toc-section-end\"\/><\/h2>\n<h3 class=\"wp-block-heading\">Main ingredients<\/h3>\n<ul class=\"wp-block-list\">\n<li>3\/4 cup rice<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1 1\/2 cups water<\/li>\n<li>2 tablespoons olive oil, divided<\/li>\n<li>2 eggs, whisked<\/li>\n<li>6 ounces mixed frozen vegetables, about half of a 12-ounce bag<\/li>\n<li>16 ounces chicken breast, chopped into small pieces<\/li>\n<li>1\/3 cup soy sauce, divided<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\">Optional extras<\/h3>\n<ul class=\"wp-block-list\">\n<li>1 clove garlic, minced<\/li>\n<li>1 teaspoon agave, maple syrup, honey, or white sugar<\/li>\n<\/ul>\n<p>The optional sweetener helps balance the saltiness of the soy sauce, but the recipe will still work without it.<\/p>\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Why_frozen_vegetables_are_perfect_here\"\/>Why frozen vegetables are perfect here<span class=\"ez-toc-section-end\"\/><\/h2>\n<p>Frozen vegetables are doing a lot of work in this recipe, and that\u2019s intentional.<\/p>\n<p>They\u2019re usually already chopped, they last much longer than fresh vegetables, and you can pour exactly what you need into the skillet without worrying about using the rest immediately.<\/p>\n<p>That makes them especially useful for budget meal prep.<\/p>\n<p>I also like frozen vegetables for fried rice because this isn\u2019t a recipe where perfectly crisp produce is the goal. That helps them separate more easily in the skillet instead of turning into one soft mass.<\/p>\n<p>If you\u2019re making this specifically for meal prep, you can cook the rice first and let it cool while you prepare the chicken and vegetables.<\/p>\n<p>And if you happen to have leftover rice already sitting in the fridge? Bring to boil, then reduce the heat all the way down and cover the pot. Let it cook for 10 minutes, then turn off the heat and keep covered for an additional 10 minutes. No peeking or stirring!<\/p>\n<\/li>\n<li id=\"wprm-recipe-7610-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Add 1 TBSP olive oil to a nonstick skillet over medium heat. Add the whisked eggs and a pinch of salt. Scramble the eggs over medium heat until they\u2019re completely cooked through, about 3-5 minutes. Transfer the eggs to a plate when finished.<\/p>\n<\/li>\n<li id=\"wprm-recipe-7610-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>In the same pan, add the remaining 1 TBSP oil and let it heat up for a good 2-3 minutes. Meanwhile, sprinkle salt over the chopped chicken. When the pan is nice and hot, add the chicken. Depending on the size of your pan, you may need to do this in 2 batches to avoid overcrowding. Cook on one side for 5-6 minutes, then flip and cook for another 4-5 minutes, or until the chicken is cooked all the way through. Repeat this process until all the chicken is cooked.<\/p>\n<\/li>\n<li id=\"wprm-recipe-7610-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Add all the chicken to the pan with 1\/3 cup of soy sauce over medium heat. If using honey or sugar, add it at this point. Toss the chicken and let the sauce thicken up, about 3-4 minutes. Set all the chicken aside.<\/p>\n<\/li>\n<li id=\"wprm-recipe-7610-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Finally, cook the veggies. Add them all to the pan with a pinch of salt and garlic if using over medium heat. Cook until they\u2019ve thawed out and warmed up, about 7-8 minutes. Turn the heat down and add the cooked rice, egg and chicken back to the pan (it\u2019s going to be a lot!). Stir until the rice starts to look darker in color. If the pan seems really dry and like there\u2019s no sauce for the rice to be coated in, add a splash of soy sauce.<\/p>\n<\/li>\n<li id=\"wprm-recipe-7610-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Divide the fried rice between three meal prep containers.
