Biryani rice takes the same 30 minutes, uses whole spices already in your pantry, and brings the whole meal together just like your favorite takeaway place. Fragrant aged basmati cooked with bloomed spices and ghee, finished with a drizzle of saffron milk (now, doesn\u2019t that sound better than white rice?). A few seconds of whole spices in hot ghee does more for flavor than any spice blend you\u2019d stir in at the end. If yours isn\u2019t labeled aged, dial back the broth by about \u00bc cup.<\/li>\n<li><strong>Chicken Broth<\/strong> <\/li>\n<li><strong>Ghee and neutral oil<\/strong>: Ghee provides the buttery, nutty base for the spice bloom; the neutral oil \u2013 like avocado oil \u2013 raises the smoke point so the ghee doesn\u2019t burn. Use both.<\/li>\n<li><strong>Whole spices<\/strong>: Cumin seeds (shahi jeera if you have it; it\u2019s earthier and more complex than standard cumin), bay leaf, mace, green cardamom pods, cloves, cinnamon stick, and star anise. These go in whole and come out whole. Don\u2019t sub ground spices; the bloom works because whole spice oils release gradually into the fat and then the liquid.<\/li>\n<li><strong>Saffron strands<\/strong>: A small pinch steeped in warm milk gives biryani rice its signature golden color and floral finish. <\/li>\n<li><strong>Kosher salt<\/strong> <\/li>\n<li><strong>Fresh mint<\/strong><\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<p class=\"wp-block-paragraph\">A medium saucepan with a <strong>tight-fitting lid<\/strong>. The goal is to trap in the steam.<\/p>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-biryani-rice\">\ud83d\udcdd How to Make Biryani Rice<\/h2>\n<ol class=\"wp-block-list\">\n<li><strong>Rinse and soak the rice.<\/strong> Rinse under cold water until it runs nearly clear \u2014 this strips the surface starch that causes clumping. Soak in fresh cold water for 20\u201330 minutes, then drain completely. The soak lets the grains hydrate and elongate; complete draining prevents a mushy finish.<\/li>\n<li><strong>Bloom the spices.<\/strong> Heat the ghee and oil together in your pan over medium until the ghee shimmers. Add the cumin seeds, bay leaf, mace, cardamom pods, cloves, cinnamon, and star anise all at once. Cook for 30\u201345 seconds, stirring, until the cumin is sputtering and the kitchen smells like a spice market. <strong>Don\u2019t rush this step, and don\u2019t walk away.<\/strong><\/li>\n<li><strong>Add broth and bring to a full boil.<\/strong> Pour in the broth and salt and bring it to a rolling boil \u2014 not a simmer, a proper boil before the rice goes in.<\/li>\n<li><strong>Add rice and reduce to low.<\/strong> Stir in the drained rice, drop the heat to low, cover tightly, and cook for 12\u201314 minutes. Check the edges at 12 minutes \u2014 you\u2019re looking for all the liquid to be absorbed. Do not stir, do not lift the lid.<\/li>\n<li><strong>Bloom the saffron.<\/strong> While the rice cooks, steep the saffron strands in a tablespoon of warm milk (around 100\u2013110\u00b0F, not boiling) for 5\u201310 minutes until the milk turns deep golden.<\/li>\n<li><strong>Drizzle and rest.<\/strong> Once the liquid is absorbed, drizzle the saffron milk over the top. Turn off the heat, replace the lid, and <strong>rest for 10 full minutes.<\/strong> This steam finish is what separates fluffy from gummy. You lose a little earthy complexity but the rice is still excellent.<\/li>\n<li><strong>Saffron \u2192 skip it:<\/strong> The rice is still great without it. <\/li>\n<li><strong>Basmati \u2192 jasmine or long-grain white rice:<\/strong> Workable, but adjust liquid and timing. Jasmine is stickier and needs less broth. The long, distinct grain character of biryani rice won\u2019t be there.<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-meat-nerd-tips\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>The 10-minute rest is not optional.<\/strong> Pulling the lid the moment the liquid is absorbed gives you dry, stiff grains with overdone bottoms. The covered rest off heat steams the rice through, redistributes moisture, and lets the saffron color spread across the grains. Set a timer and walk away.<\/li>\n<li><strong>Bloom saffron in warm milk, not hot.<\/strong> Boiling milk kills the compounds that give saffron its flavor. Keep it around 100\u2013110\u00b0F and steep for the full 5\u201310 minutes before you drizzle.<\/li>\n<li><strong>Don\u2019t double the assertive spices.<\/strong> If you scale this recipe up, don\u2019t double the bay leaf, star anise, or mace \u2014 they\u2019ll overpower the rice. Double everything else but cap those three at 1.5x.<\/li>\n<li><strong>Make it ahead.<\/strong> Biryani rice actually improves overnight \u2014 the spice flavor deepens. Cook, cool uncovered for 10 minutes, then cover and refrigerate.
