They have a chewy, meaty texture and absorb the flavors of whatever sauce or curry they are cooked in.

Because they are relatively neutral in flavor, they work particularly well in Indian curries. The soya chunks soak up the onion-tomato gravy, making every bite flavorful.

For this recipe, I prefer to first cook the soya chunks in water and then drain and squeeze them well before adding them to the curry. This removes excess water and allows the chunks to absorb more of the flavorful gravy.

Ingredients for Soya Chunk Curry

Soya chunks: Use your favorite brand of dried soya chunks. Small or medium-sized chunks work particularly well for curry.

Ginger and garlic: Fresh ginger and garlic add warmth and depth. Freshly minced or crushed ginger and garlic will give the best flavor.

Onion: Finely chopped onion creates the base of the curry and adds sweetness and body to the gravy.

Tomatoes: Tomatoes provide acidity and help create the base of the gravy. Use ripe tomatoes for the best flavor.

Spices: This a very minimal spiced everyday curry. I used cumin seeds in the bgining to temper the oil, and then made a spice paste with turmeric powder, chili powder, cumin powder and coriander powder. And finished the dish with little bit of garam masala powder.

Cilantro: Fresh cilantro is optional but makes a lovely finishing garnish.

How to Make Soya Chunk Curry

1 – Add the dry soya chunks to a bowl, sprinkle salt and pour hot water to hydrate the soya chunks.

2 – In a pan or a wok, heat oil and add the cumin seeds. They act like little sponges, so if they are holding too much water, they will not absorb as much of the curry gravy.

Once squeezed, add them directly to the cooked masala and let them sauté for a few minutes before adding the water.

This allows the spices to coat the soya chunks and gives them much more flavor.

How Spicy Is This Curry?

This is designed to be a mild soya chunk curry for everyday purpose.

The combination of cumin, coriander, turmeric, Kashmiri chili powder, and garam masala provides plenty of flavor without making the curry particularly hot.

If you prefer a spicier curry, you can increase the chili powder or add a finely chopped green chili along with the ginger and garlic.

For a family-friendly version, keep the chili powder mild and let everyone add extra heat at the table.

What to Serve With Soya Chunk Curry

There are so many ways to serve this curry.

A bowl of steamed basmati rice is probably the simplest pairing. The mild gravy mixes beautifully with fluffy rice.

For something more flavorful, serve it with jeera rice, vegetable pulao, or peas pulao.

The thick, flavorful gravy makes this curry perfect with everyday roti or chapati.

For a more indulgent meal, serve it with warm naan or garlic naan.

A flaky paratha and soya chunk curry make a satisfying weekend lunch.

Easy Variations to switch up the taste of the same curry

Add diced potatoes along with the soya chunks. The potatoes absorb the flavorful gravy and make the curry even more filling.

Add green peas for extra color, texture, and sweetness.

For a richer version, add a small amount of cream or coconut milk toward the end. This creates a creamy variation while keeping the soya chunks as the main ingredient.

Add chopped spinach toward the end of cooking for an easy way to incorporate more vegetables.

Add carrots, peas, bell peppers, cauliflower, or green beans to turn this into a complete vegetable and protein-packed curry.

Can I Freeze Soya Chunk Curry?

Yes. Allow the curry to cool completely before transferring it to a freezer-safe container.

Freeze in individual portions if you are meal prepping.
