Skip it, and the coating slides off in the pot.<\/li>\n<li><strong>Taco seasoning and kosher salt:<\/strong> Seasoning the flour, not just the filling, is what keeps the crust from tasting flat.<\/li>\n<li><strong>Eggs:<\/strong> Beaten. Two is enough for twelve balls if you let each one drip before it hits the Cheetos.<\/li>\n<li><strong>Hot Cheetos:<\/strong> Crush them fine with a few small pieces left in for texture. Big chunks fall off in the oil and burn.<\/li>\n<li><strong>Canola oil:<\/strong> Enough for two inches in a heavy pot. The flour is what gives the egg something to hold onto, so do not skip straight to the egg.<\/li>\n<li>Heat two inches of oil in a heavy pot to <strong>350\u00b0F<\/strong>. Hold it between 340\u00b0F and 350\u00b0F while you fry. Crowding the pot drops the temperature fast, so give them room and let the oil recover between batches.<\/li>\n<li>Transfer to a wire rack and <strong>rest 3 to 5 minutes<\/strong>.
