This lamb keema with tadka yogurt is built with real technique instead of a filter: a garlic-chili tadka bloomed hot in ghee, poured over cool yogurt, then buried under ground lamb that spent real time browning and blooming its spices instead of just a quick, boring sear. <\/p>\n<p class=\"wp-block-paragraph\">It\u2019s dishes like this that we love to put in front of friends and family to blow their minds and then show just how easy it can be to make. The grass flavor is milder than Australian lamb, and the fat content is perfect for carring the flavor without drying out. <\/li>\n<li><strong>Onion<\/strong><\/li>\n<li><strong>Garlic and fresh ginger<\/strong>: both fresh, not from a jar. Grate the ginger on a microplane.<\/li>\n<li><strong>Tomato paste:<\/strong> the kind in a tube keeps better once opened than a can does.<\/li>\n<li><strong>Cumin, coriander, turmeric, and garam masala<\/strong>: standard pantry spices, but use them only if you bought them within the last year. Otherwise, it\u2019s time to restock\u2026 Stale spice tastes dull and dusty no matter how long you toast it.<\/li>\n<li><strong>Kashmiri chili powder:<\/strong> brings color and only mild heat. Regular chili powder or cayenne runs hotter and darker, so cut the amount if that\u2019s what\u2019s in your pantry.<\/li>\n<li><strong>Kosher salt and black pepper<\/strong><\/li>\n<li><strong>Frozen peas:<\/strong> added at the very end so they stay bright green instead of going drab and gray.<\/li>\n<li><strong>Water or chicken stock<\/strong><\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For the Tadka Yogurt:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Whole milk Greek yogurt<\/strong>: full-fat holds up to the hot tadka without breaking. Low-fat can weep and go watery on the plate.<\/li>\n<li><strong>Butter or ghee<\/strong>: ghee tolerates higher heat and gives a nuttier finish. Butter works fine at a slightly lower flame.<\/li>\n<li><strong>Garlic<\/strong>: sliced thin, not minced, so it turns golden instead of scorching.<\/li>\n<li><strong>Cumin seeds<\/strong>: whole seeds, not ground. They need to hit hot fat and sizzle to release their oil.<\/li>\n<li><strong>Whole dried red chilies: <\/strong>for heat and aroma without turning the tadka spicy-hot. Fish them out before serving if no one at your table wants to bite into one.<\/li>\n<li><strong>Kashmiri chili powder:<\/strong> stirred in off the heat so it doesn\u2019t scorch and turn bitter.<\/li>\n<li><strong>Kosher salt<\/strong><\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong>For Garnish:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li>Fresh cilantro leaves<\/li>\n<li>Red onion, thinly sliced<\/li>\n<li>Jalape\u00f1o, thin rings<\/li>\n<li>Lemon wedges<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"h-how-to-make-lamb-keema\" class=\"wp-block-heading\">\ud83d\udcdd How to Make Lamb Keema<\/h2>\n<ol class=\"wp-block-list\">\n<li>Heat the oil in a large skillet over medium-high heat. Add the diced onion and cook for 4 to 5 minutes, stirring occasionally, until soft and translucent at the edges.<\/li>\n<li>Stir in the garlic and ginger and cook for 1 minute, just until fragrant.<\/li>\n<li>Add the ground lamb and cook for 6 to 8 minutes, breaking it up with a wooden spoon, <strong>until no pink remains and the fat has fully rendered out<\/strong>. Drain off excess fat, leaving about a tablespoon behind to carry the spices.<\/li>\n<li>Stir in the tomato paste and cook for 1 to 2 minutes, stirring constantly, until it darkens a shade and smells sweeter instead of raw.<\/li>\n<li>Sprinkle in the cumin, coriander, Kashmiri chili powder, turmeric, garam masala, salt, and black pepper. Stir well to coat the lamb and cook for 30 to 60 seconds, just until the spices smell toasted.<\/li>\n<li>Pour in the water or stock and stir to combine. Reduce the heat to medium-low and simmer for 5 to 7 minutes, <strong>until the mixture thickens enough to hold its shape on a spoon<\/strong>.<\/li>\n<li>Stir in the frozen peas and cook for 2 to 3 minutes, until heated through and still bright green. Remove from the heat and keep warm.<\/li>\n<li>In a small bowl, stir the Greek yogurt with a pinch of salt until smooth. Set aside.<\/li>\n<li>Heat the butter or ghee in a small skillet over medium heat. Add the cumin seeds and whole dried chilies and cook for 30 to 60 seconds, until the cumin sizzles and the chilies turn fragrant.<\/li>\n<li>Add the sliced garlic and cook for 1 to 2 minutes, stirring often, <strong>until lightly golden, not brown<\/strong>. Pull it the second it colors: garlic goes from golden to bitter fast.<\/li>\n<li>Remove the pan from the heat and stir in the Kashmiri chili powder right away, off the heat so it doesn\u2019t scorch. Let the tadka cool for about 1 minute.<\/li>\n<li>Spoon several tablespoons of tadka yogurt onto each plate and swirl it into a wide circle with the back of a spoon, then spoon the hot keema into the center.<\/li>\n<li>Top with cilantro, sliced red onion, jalape\u00f1o rings, and a lemon wedge. You\u2019ll lose some richness but keep every bit of the spice profile.<\/li>\n<li>Ghee for butter, or butter for ghee, in the tadka: fine in either direction. Ghee holds higher heat, so the garlic crisps a little faster.<\/li>\n<li>Water for chicken stock: keeps the sauce lighter and lets the spices lead instead of a deeper savory base.<\/li>\n<li>Plain whole milk yogurt for Greek yogurt: strain it through a cheesecloth-lined sieve for 20 minutes first, or it will be thinner on the plate than you want.<\/li>\n<li>No time to make the tadka? A bowl of our <a href=\"https:\/\/girlcarnivore.com\/raita-recipe\/\">cucumber raita<\/a> works as a cooling stand-in, though you\u2019ll lose the toasted garlic-chili flavor that makes this dish worth the extra step.<\/li>\n<li>This is the same plating trick we use for our <a href=\"https:\/\/girlcarnivore.com\/greek-ground-lamb-recipe\/\" data-type=\"post\" data-id=\"75710\">Greek ground recipe<\/a> (and honestly, a lot of recipes we put in front of guests of the GC Meat Labs).<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-tip cwp-inner\">\n<h2 id=\"h-meat-nerd-tips\" class=\"wp-block-heading block-tip__title\">\ud83d\udca1 Meat Nerd Tips<\/h2>\n<ul class=\"wp-block-list\">\n<li><strong>Keep some fat in the pan.<\/strong> Drain the lamb fat down to about a tablespoon, not to zero. That reserved fat is what carries the toasted spices through the rest of the cook; skip it, and your keema tastes flat no matter how much garam masala you add.<\/li>\n<li><strong>Pull the tadka garlic early.<\/strong> The moment it turns pale gold, get it off the heat. Ghee holds heat after the pan leaves the burner, so garlic that looks right at the stove can turn bitter or even burnt by the time you plate. Your nose will know the second it\u2019s overcooked. <\/li>\n<li><strong>Split the make-ahead job.<\/strong> Make the keema up to 3 days ahead and treat the tadka yogurt as a same-day task. Reheated keema is arguably better once the spices have had a night to settle in, but the yogurt doesn\u2019t hold through that same wait.<\/li>\n<li><strong>Batch the lamb, not the tadka.<\/strong> Feeding a crowd? Double the lamb, but keep the tadka yogurt to a fresh batch per meal instead of scaling it all at once. The tadka yogurt already does a lot of the cooling work, but you\u2019ll want a drink on hand once you hit the jalape\u00f1o rings.<\/li>\n<\/ul>\n<\/div>\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"h-leftovers-and-storage\" class=\"wp-block-heading\">\ud83e\uddca Leftovers and Storage<\/h2>\n<ul class=\"wp-block-list\">\n<li>Refrigerate the keema in an airtight container for up to 4 days.<\/li>\n<li>Freeze the keema alone, without the yogurt or tadka, for up to 3 months in a freezer-safe container.<\/li>\n<li>Reheat the keema in a skillet over medium-low heat with a splash of water or stock to loosen it back up. The microwave works too, in 30-second bursts, stirred between each.<\/li>\n<li>Make the tadka yogurt fresh each time you serve leftovers.
