Wound through the middle is a spiral of cinnamon sugar that melts into the dough as it bakes and leaves those dark ribbons in every slice.<\/p>\n<p class=\"wp-block-paragraph\">Most of the 3 hours is rising, which is to say most of it is you doing something else. The actual work is about 30 minutes spread across the whole thing.<\/p>\n<p class=\"wp-block-paragraph\">It toasts beautifully too. Fresh it\u2019s soft and lovely. Day 2, toasted, with butter melting into the cinnamon ribbons, is arguably better. The reason is the sugar in the filling dissolves in the dough\u2019s own moisture and turns to syrup. That syrup sits between two layers of dough and stops them fusing together. Then the loaf expands in the oven, the top lifts, and you\u2019re left with a gap.<\/p>\n<p class=\"wp-block-paragraph\">So it\u2019s a moisture problem more than a rolling problem, and knowing that changes what you do about it.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Mix a tablespoon of flour into the cinnamon sugar.<\/strong> It absorbs the syrup as it forms so the filling stays a paste instead of going liquid. This is the single most effective fix and almost nobody mentions it.<\/li>\n<li><strong>Leave the last inch bare.<\/strong> No filling along the edge you roll toward. Plain dough seals against plain dough and anchors the whole spiral.<\/li>\n<li><strong>Roll it tightly.<\/strong> Keep tension the entire way so there\u2019s no air trapped between the layers to start with.<\/li>\n<li><strong>Don\u2019t overload it.<\/strong> More sugar means more syrup. Generous and even beats thick.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">A small gap here and there is completely normal and it tastes exactly the same. Whole milk gives the softest crumb. Almond or oat milk work if you need it dairy free.<\/li>\n<li><strong>Unsalted butter (\u00bd cup):<\/strong> This is what makes it an enriched dough. It\u2019s why the crumb is soft and tender rather than chewy, and why the loaf keeps well for days. Half a cup sounds like a lot. It\u2019s doing real work.<\/li>\n<li><strong>Active dry yeast (2\u00bc teaspoons, 1 package):<\/strong> Goes into the warm milk to proof, and you\u2019ll know within 10 minutes whether it\u2019s alive. If it doesn\u2019t foam, it\u2019s dead and there\u2019s no saving the loaf later. Instant yeast works too and can go straight in with the flour.<\/li>\n<li><strong>Eggs (2 large):<\/strong> Structure, richness, and color. They also help the loaf stay soft longer.<\/li>\n<li><strong>Granulated sugar (\u00bd cup for the dough, \u2153 cup for the filling):<\/strong> The dough sugar makes it gently sweet, more brioche than dessert. The filling sugar is what melts into those dark ribbons.<\/li>\n<li><strong>Vanilla extract (1 teaspoon):<\/strong> Rounds everything out. Almond extract is an interesting swap if you want something different.<\/li>\n<li><strong>All purpose flour (3\u00bd cups, plus 1 tablespoon for the filling):<\/strong> Plain flour gives a soft crumb. Bread flour works and gives a chewier, more structured loaf. The extra tablespoon goes into the cinnamon sugar and it\u2019s what keeps the swirl from turning to syrup.<\/li>\n<li><strong>Salt (1 teaspoon):<\/strong> Add it with the flour rather than directly onto the yeast. Without it the loaf tastes flat in a way that\u2019s hard to place.<\/li>\n<li><strong>Cinnamon (2 tablespoons):<\/strong> Two tablespoons for one loaf is a proper amount and you\u2019ll taste it. If your cinnamon has been in the cupboard over a year it\u2019s faded, and this is a recipe where you\u2019ll notice.<\/li>\n<li><strong>Egg (1, beaten, for brushing):<\/strong> Gives you the glossy golden top. Then take the pan off the stove and leave it 5 minutes. By the time the butter finishes melting the milk is almost certainly hotter than you want, and yeast starts dying above 120\u00b0F. You\u2019re aiming for around 105\u00b0F, which feels comfortably warm on your wrist, like bathwater. This is the step that quietly ruins loaves, so give it the 5 minutes.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Proof the yeast.<\/strong> Sprinkle it over the warm milk, whisk it in, and leave it 10 minutes. It should foam up and smell like bread. If it just sits there looking like milk, the yeast is dead. Less traditional and very good.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Glazed.<\/strong> Powdered sugar and milk drizzled over the cooled loaf takes it toward dessert.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Two smaller loaves.<\/strong> Split the dough between two 8 by 4 pans. Bake 25 to 30 minutes and check the temperature earlier. One for now, one for the freezer.<\/p>\n<h2 id=\"h-what-to-do-with-it\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"What_To_Do_With_It\"\/>What To Do With It<span class=\"ez-toc-section-end\"\/><\/h2>\n<p class=\"wp-block-paragraph\">Toasted with butter is the answer most mornings, and the butter melting into the cinnamon ribbons is the whole appeal.<\/p>\n<p class=\"wp-block-paragraph\">But the real reason to bake an extra loaf is <strong><a href=\"https:\/\/www.jocooks.com\/recipes\/french-toast\/\" data-type=\"post\" data-id=\"223\">French toast<\/a><\/strong>. Enriched bread that\u2019s a day or two old soaks up custard perfectly, and the cinnamon is already built in so you barely need to season the eggs.
