But a little char and you\u2019ve got a cut that is begging to be tossed into your protein bowls, wraps, tacos, and salads. Aka, a meal prepper\u2019s dream cut.<\/p>\n<p class=\"wp-block-paragraph\">The lemon chimichurri here is brighter than a <a href=\"https:\/\/girlcarnivore.com\/homemade-cilantro-chimichurri\/\" type=\"post\" id=\"43555\">classic Argentine version<\/a>, built with red wine vinegar AND fresh lemon juice so it cuts through the fat of the steak without losing the grassy, herby backbone. Good if you want to tip the bowl more Mediterranean.<\/li>\n<\/ul>\n<h3 class=\"wp-block-heading\" id=\"h-equipment\">Equipment<\/h3>\n<ul class=\"wp-block-list\">\n<li><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\"><strong>Cast-iron skillet or grill pan<\/strong>:<\/span> mandatory for searing.
