And we\u2019ve made so many versions like this <a href=\"https:\/\/www.twopurplefigs.com\/octopus-ceviche\/\">Octopus Ceviche<\/a>, <a href=\"https:\/\/www.twopurplefigs.com\/tuna-ceviche\/\">Tuna Ceviche<\/a> or <a href=\"https:\/\/www.twopurplefigs.com\/shrimp-ceviche\/\">Shrimp Ceviche.<\/a> Scallops make particularly good ceviche because of their naturally sweet flavor and delicate texture.<\/p>\n<p>Last week we got ourselves some fresh Hokkaido scallops and fell on scallop madness! It started wit some <a href=\"https:\/\/www.twopurplefigs.com\/scallop-pasta\/\">Scallop Pasta<\/a>,\u00a0<a href=\"https:\/\/www.twopurplefigs.com\/broiled-scallops\/\">Broiled Scallops<\/a> and we saved some for this scallop ceviche recipe.<\/p>\n<p>What makes this dish super special is the balance, so citrus should be bright but not harsh, the onion should add crunch without overwhelming the tender sweet scallops. Adding chile should give you just enough heat, avocado for a creamy texture, bright cilantro and sweet pineapple to balance it all out.<\/p>\n<h2>What Is Scallop Ceviche?<\/h2>\n<p class=\"isSelectedEnd\">Scallop ceviche is a seafood dish from Peru made with raw scallops that are marinated in an acidic mixture, usually citrus juice, along with ingredients such as onion, chile, herbs, and sometimes fruit or vegetables.<\/p>\n<p class=\"isSelectedEnd\">The acid changes the structure of proteins in the scallops, producing the opaque appearance and firmer texture associated with ceviche. But ceviche isn\u2019t simply seafood cooked in lime juice.<\/p>\n<p class=\"isSelectedEnd\">The process is different from heat cooking, and the citrus does not make potentially contaminated seafood automatically safe. That\u2019s why starting with properly handled and fresh scallops from a trustworthy source is so important.<\/p>\n<p class=\"isSelectedEnd\">So when you\u2019re making this dish, remember that ceviche is not cooked by heat. Look for those factors:<\/p>\n<ul data-spread=\"false\">\n<li>Come from a reputable seafood counter or supplier.<\/li>\n<li>Have a clean, mild ocean smell.<\/li>\n<li>Look moist and fresh rather than dried out.<\/li>\n<li>Have firm, intact flesh.<\/li>\n<li>Are intended by the supplier for raw preparation.<\/li>\n<li>Avoid scallops with an unpleasant, strongly fishy, sour, or ammonia-like odor.<\/li>\n<li>If the seafood counter cannot tell you how the scallops were handled or whether they are appropriate for raw preparation, then don\u2019t buy it.<\/li>\n<\/ul>\n<h2>Fresh vs. Frozen Scallops<\/h2>\n<ul>\n<li class=\"isSelectedEnd\"><strong>Frozen scallops: <\/strong>can be suitable for ceviche if they were properly handled and are sold for raw preparation.
