\"Wildfire<\/p>\n

For the main course, we\u2019re taking a page from the Philadelphia playbook: cheesesteak. But not just any cheesesteak. No, we\u2019re making this one with thinly sliced rib-eyes. (Of course, you can use the more traditional top or bottom round.) And to crank up the heat, we\u2019ll use poblano chiles instead of bell peppers. For mushrooms, you can\u2019t beat the elegance of shiitakes.<\/p>\n

Our side dish is\u2014you guessed it\u2014potato salad, but, oh, what potato salad. German-style potato salad enhanced with griddled onion, capers, and bacon.<\/p>\n

And for dessert? That campfire classic, s\u2019mores, only for these, you don\u2019t need a campfire. You don\u2019t even need a grill. The secret, deconstruct and reconstruct the classic s\u2019more into a sandwich: 2 graham crackers sandwiched with marshmallow and bittersweet chocolate. The Raichlen touch? A slice of candied orange. You\u2019ll crisp the whole shebang on the griddle. Who says s\u2019mores are only for kids? <\/p>\n

Finally, to wash it all down? One of my favorite cocktails: the smoky mezcalini. Think margarita meets mojito and don\u2019t think of Labor Day without it. <\/p>\n
