It&#8217;s soft, white, slightly grainy and just a little sweet. <\/p>\n<p class=\"wp-block-paragraph\">The name tells you how it&#8217;s made.\u00a0<strong><em>Ricotta<\/em>\u00a0means &#8220;re-cooked&#8221; in Italian, <\/strong>because the traditional version is made by cooking the whey left over from making another cheese, like pecorino or mozzarella. <\/p>\n<p class=\"wp-block-paragraph\">Here&#8217;s the fun part: because<strong> it&#8217;s made from whey<\/strong> and not from milk curds, ricotta isn&#8217;t technically a cheese at all. It&#8217;s a dairy product, the same way as <a href=\"https:\/\/www.thepetitecook.com\/easy-homemade-mozzarella\/\" data-type=\"post\" data-id=\"14696\">mozzarella<\/a> and burrata.<\/p>\n<p class=\"wp-block-paragraph\">The version in this post is the home cook&#8217;s version. Instead of whey, we start with whole milk and add lemon juice to separate it. <\/p>\n<p class=\"wp-block-paragraph\">Strictly speaking that makes it a fresh curd, not true ricotta. But the taste, the texture and everything you&#8217;d do with it are the same. <\/p>\n<p class=\"wp-block-paragraph\"><strong>It takes 30 minutes <\/strong>instead of a whole cheesemaking day, and you can make it tonight.<\/p>\n<h2 id=\"homemade-vs-store-bought-ricotta\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Homemade vs store-bought ricotta<\/mark><\/h2>\n<p class=\"wp-block-paragraph\">Shop-bought ricotta is fine. Really. But once you&#8217;ve made your own, it&#8217;s hard to go back. Here&#8217;s what actually changes.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Taste.<\/strong>\u00a0Fresh ricotta is sweeter and milkier. Tubs from the shop often taste flat or slightly sour, because they&#8217;re days or weeks old by the time you buy them.<\/li>\n<li><strong>Texture.<\/strong>\u00a0Homemade is loose, fluffy and creamy. Many shop versions are firmer, because they&#8217;re made for a longer a long shelf life.<\/li>\n<li><strong>Ingredients.<\/strong>\u00a0Yours has three things in it. The fat is what makes ricotta creamy.<\/p>\n<p class=\"wp-block-paragraph\"><strong>One important rule:<\/strong>\u00a0pasteurised milk is fine, but avoid UHT (ultra-high temperature) milk.<\/p>\n<p class=\"wp-block-paragraph\"><strong><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Which milk should you use?<\/mark><\/strong><\/p>\n<p class=\"wp-block-paragraph\">You can make ricotta from any of these, and each one tastes different:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Cow&#8217;s milk<\/strong>: mild, milky and sweet. The easiest to find and the best place to start.<\/li>\n<li><strong>Sheep&#8217;s milk<\/strong>: richer and a little nutty. This is the classic Sicilian ricotta, and it&#8217;s what goes inside the <a href=\"https:\/\/www.thepetitecook.com\/sicily-chocolate-cannoli-with-ricotta-pistachios\/\" data-type=\"post\" data-id=\"234\">traditional cannoli<\/a>. If you can find sheep&#8217;s milk, try it at least once.<\/li>\n<li><strong>Goat&#8217;s milk:<\/strong> slightly tart, with that unmistakable goat&#8217;s milk flavour. Lovely with honey.<\/li>\n<li><strong>Buffalo milk:<\/strong> very high in fat, and super creamy. Hard to find outside Italy, but worth giving it a try if you find it.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">You can also <strong>swap the lemon juice for white vinegar. <\/strong>Vinegar is more reliable and gives a slightly firmer curd; lemon gives a fresher, brighter taste. <\/p>\n<h2 id=\"equipment-youll-need\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Equipment you&#8217;ll need<\/mark><\/h2>\n<p class=\"wp-block-paragraph\">Nothing fancy. You almost certainly have most of this already.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>A large heavy pot.<\/strong>\u00a0Heavy-bottomed is better, since it heats the milk evenly.<\/li>\n<li><strong>An instant-read thermometer.<\/strong> Any cheap digital one will do.<\/li>\n<li><strong>A strainer and something to line it with.<\/strong>\u00a0Cheesecloth is traditional, but you&#8217;ve got options. See below.<\/li>\n<li><strong>A slotted spoon<\/strong>\u00a0for lifting the curds out gently.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\"><strong><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">No Cheesecloth? use one of these<\/mark><\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Butter muslin:<\/strong> finer than standard cheesecloth and catches more of the small curds. My favourite.<\/li>\n<li><strong>A clean, thin cotton tea towel:<\/strong> works well. Go slowly. The milk should look lightly foamy on top. An hour gives you a firmer one you can slice. Heat the milk\u00a0<em>slowly<\/em>, and don&#8217;t stir after the lemon juice goes in. Stirring breaks the curds while they&#8217;re still forming, and grainy ricotta is what you get.<\/p>\n<h2 id=\"troubleshooting-why-your-ricotta-didnt-work\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Troubleshooting: why your ricotta didn&#8217;t Work<\/mark><\/h2>\n<p class=\"wp-block-paragraph\">If a batch goes wrong, it&#8217;s almost always one of these.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Nothing separated.<\/strong>\u00a0Either the milk wasn&#8217;t hot enough, or it was UHT. If the milk is fine, put it back on low heat, bring it up to temperature properly, and add another squeeze of lemon.<\/p>\n<p class=\"wp-block-paragraph\"><strong>The curds are tiny and grainy.<\/strong>\u00a0Usually too much stirring, or milk that got too hot and started to boil. Next time, take it off the heat the moment it foams, and stir once, gently.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Barely any curds formed.<\/strong>\u00a0Not enough acid, or low-fat milk. Add another tablespoon of lemon juice, wait five more minutes, and see if it comes together.<\/p>\n<p class=\"wp-block-paragraph\"><strong>It&#8217;s dry and crumbly.<\/strong>\u00a0You drained it too long. Stir a splash of milk or cream back in and it will loosen up.<\/p>\n<p class=\"wp-block-paragraph\"><strong>It tastes sour, or too strongly of lemon.<\/strong>\u00a0Too much acid went in. Use less next time, or switch to vinegar, which tastes more neutral.<\/p>\n<p class=\"wp-block-paragraph\"><strong>It&#8217;s too wet.<\/strong>\u00a0Keep draining. Another 20 minutes usually does it.<\/p>\n<h2 id=\"what-to-do-with-leftover-whey\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">What to do with leftover whey<\/mark><\/h2>\n<p class=\"wp-block-paragraph\">That pale yellow liquid in the bowl is whey, and please don&#8217;t pour it down the sink. <\/p>\n<p class=\"wp-block-paragraph\">It&#8217;s full of flavour and protein, and in Italy it&#8217;s the starting point for real ricotta rather than a by-product.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Bake with it.<\/strong>\u00a0Swap it in for the water in bread or <a href=\"https:\/\/www.thepetitecook.com\/homemade-pizza-dough\/\" data-type=\"post\" data-id=\"9101\">pizza dough<\/a>. My grandmother swore by this.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">Whey keeps in the fridge for about 5 days, or freeze it in portions.<\/p>\n<h2 id=\"storing-and-freezing-ricotta-cheese\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Storing and freezing ricotta cheese<\/mark><\/h2>\n<p class=\"wp-block-paragraph\"><strong>In the fridge:<\/strong>\u00a0keep fresh homemade ricotta in an airtight container and <strong>eat it within 2 to 3 days.<\/strong> It has no preservatives, so it won&#8217;t last like a shop tub. Some liquid may separate out. Just drain it off.<\/p>\n<p class=\"wp-block-paragraph\"><strong>In the freezer:<\/strong>\u00a0yes, you can freeze it. <strong>Freeze it in an airtight container for up to 3 months<\/strong>, thaw overnight in the fridge, drain the extra liquid, and give it a good stir before using.<\/p>\n<p class=\"wp-block-paragraph\">Freezing changes the texture. It comes out grainier and more watery once thawed. <\/p>\n<p class=\"wp-block-paragraph\">Use it in lasagna, cannelloni, <a href=\"https:\/\/www.thepetitecook.com\/pasta-al-forno-italian-pasta-bake\/\" data-type=\"post\" data-id=\"22435\">baked pasta<\/a>, <a href=\"https:\/\/www.thepetitecook.com\/lemon-ricotta-cake\/\" data-type=\"post\" data-id=\"17734\">ricotta cake<\/a> or <a href=\"https:\/\/www.thepetitecook.com\/orange-pancakes\/\" data-type=\"post\" data-id=\"82595\">pancakes<\/a>, where the texture won&#8217;t show. <\/p>\n<h2 id=\"customise-your-ricotta\" class=\"wp-block-heading\"><mark style=\"background-color:var(--global-palette7)\" class=\"has-inline-color\">Customise your ricotta<\/mark><\/h2>\n<p class=\"wp-block-paragraph\">I can&#8217;t stress enough how versatile ricotta is. These come closest.<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>Cottage cheese.<\/strong>\u00a0The closest match by far. Give it a quick blend to smooth out the lumps, and use it in baked dishes.<\/li>\n<li><strong>Full-fat Greek yogurt<\/strong>, strained overnight. After this time the milk should start separating in clumps.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-10867-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Set a strainer over a bowl and line the strainer with a cheesecloth. Scoop in the big curds out of the pot with a slotted spoon and transfer them to the strainer, then pour in the remaining curds.&#13;<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-10867-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Let the ricotta sit for 15 minutes up to 1 hour, depending on how creamy you want it to be.&#13;<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-10867-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">You can eat the ricotta straight away or store it in an airtight container in the fridge for up to 2 days.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div id=\"recipe-10867-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\">\n<div class=\"wprm-recipe-notes\"><span style=\"display: block;\">You can store fresh ricotta cheese in an airtight container in the fridge for up to 2 days.<\/span><\/p>\n<h6><strong>Troubleshooting<\/strong><\/h6>\n<p><span style=\"display: block;\">If a batch goes wrong, it&#8217;s almost always one of these:<\/span><\/p>\n<p><span style=\"display: block;\"><strong>Nothing separated.<\/strong>\u00a0Either the milk wasn&#8217;t hot enough, or it was UHT. If the milk is fine, put it back on low heat, bring it up to temperature properly, and add another squeeze of lemon.<\/span><\/p>\n<p><span style=\"display: block;\"><strong>The curds are tiny and grainy.<\/strong>\u00a0Usually too much stirring, or milk that got too hot and started to boil. Next time, take it off the heat the moment it foams, and stir once, gently.<\/span><\/p>\n<p><span style=\"display: block;\"><strong>Barely any curds formed.<\/strong>\u00a0Not enough acid, or low-fat milk. Add another tablespoon of lemon juice, wait five more minutes, and see if it comes together.<\/span><\/p>\n<p><span style=\"display: block;\"><strong>It&#8217;s dry and crumbly.<\/strong>\u00a0You drained it too long. Stir a splash of milk or cream back in and it will loosen up.<\/span><\/p>\n<p><span style=\"display: block;\"><strong>It tastes sour, or too strongly of lemon.<\/strong>\u00a0Too much acid went in. Use less next time, or switch to vinegar, which tastes more neutral.<\/span><\/div>\n<\/div>\n<div id=\"recipe-10867-nutrition\" class=\"wprm-nutrition-label-shortcode-container\">\n<p><span
