butter (cut into pieces), and the salt to a boil.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Take the pot off the heat, dump in all the flour at once, and stir it with a spatula until it forms a smooth ball of dough that pulls away from the sides of the pot.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Put it back over low heat for 1 to 2 minutes, stirring, until a thin film forms on the bottom of the pot.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Let it cool for 5 minutes. Add the beaten eggs one at a time, mixing well after each addition. The dough will look like it&#8217;s breaking apart at first \u2014 that&#8217;s totally normal. Just keep going and it&#8217;ll come back together.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">The choux dough is ready when it forms a ribbon that slowly droops off the spatula into a beak-like point.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Fold in the cheese (save a little for topping) and add pinch of nutmeg, salt and black pepper the pepper, and the nutmeg. Taste and adjust the seasoning as needed.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Spoon out walnut-sized mounds, spacing them well apart, and sprinkle with the remaining cheese. <\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-83377-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p><span style=\"display: block;\">Bake for 10 minutes at 425\u00b0F\/220\u00b0C (conventional) or 400\u00b0F\/200\u00b0C (convection), then lower the temperature to 375\u00b0F\/190\u00b0C (conventional) or 350\u00b0F\/170\u00b0C and bake for another 10 to 15 minutes to dry them out \u2014 don&#8217;t open the oven door during this time.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div id=\"recipe-83377-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\">\n<div class=\"wprm-recipe-notes\"><span dir=\"ltr\" style=\"display: block;\"><strong>Make-ahead<\/strong>: The choux dough will keep for 24 hours in the fridge in an airtight container, covered with plastic wrap pressed right onto the surface. Just  <\/p>\n<p class=\"wp-block-paragraph\">Honestly, since goug\u00e8res puff up while baking, it doesn\u2019t matter if the mounds aren\u2019t perfectly smooth. Besides, goug\u00e8res traditionally have a slightly rustic shape. But I recently discovered this two-step method, and since then I\u2019ve found that my goug\u00e8res rise even better and never fall flat. <\/p>\n<ul class=\"wp-block-list\">\n<li>Bake <strong>for 10 minutes at 200 \u00b0C in <\/strong>a convection oven so they puff up nicely at the start of baking.<\/li>\n<li>Then, without opening the oven, lower the temperature to <strong>170 \u00b0C and <\/strong>continue baking for <strong>10 to 15 minutes<\/strong>. This will dry them out without letting them burn.   <\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">And now that you\u2019ve mastered the technique, you can have fun filling them just like in my recipe for <a href=\"https:\/\/lacuisinedegeraldine.fr\/en\/smoked-salmon-cream-puffs\" data-type=\"post\" data-id=\"69167\">Smoked Salmon Cream Puffs<\/a>!<\/p>\n<h2 id=\"h-why-don-t-my-gougeres-rise-or-why-do-they-deflate\" class=\"wp-block-heading\">Why don\u2019t my goug\u00e8res rise (or why do they deflate)?<\/h2>\n<p class=\"wp-block-paragraph\">This is the classic problem with choux pastry, and the cause is almost always one of these four:<\/p>\n<ul class=\"wp-block-list\">\n<li><strong>The batter was too runny<\/strong>. This is by far the most common reason, and it\u2019s either because you didn\u2019t weigh your eggs or because your egg wash isn\u2019t dry enough. Really, rely on the ribbon test rather than the number of eggs.  <\/li>\n<li><strong>The oven wasn\u2019t hot enough at first<\/strong>. For the choux pastries to rise, you absolutely need high heat for the first ten minutes, because it\u2019s the thermal shock that turns the water into steam and causes the dough to rise. <\/li>\n<li><strong>You opened the oven door<\/strong>. The cold air causes the steam to drop suddenly, and the choux pastries collapse and never rise again, so hold off until the last twenty minutes. <\/li>\n<li><strong>They weren\u2019t cooked long enough<\/strong>. If your goug\u00e8res puffed up nicely in the oven but deflate once you take them out, it\u2019s often because they weren\u2019t cooked long enough. Baking time may vary depending on their size. There are two methods, which don\u2019t yield quite the same result. <\/p>\n<ul class=\"wp-block-list\">\n<li><strong>To freeze raw goug\u00e8res<\/strong>: pipe <strong>them<\/strong> onto a baking sheet, place the sheet in the freezer for two hours, then transfer the hardened dough to a freezer bag, where they will keep for three months. On the day you\u2019re ready to bake them, pop them in the oven straight from the freezer and add 5 minutes to the baking time. <\/li>\n<li><strong>Freezing baked goug\u00e8res (the easiest method)<\/strong>: Let the goug\u00e8res cool completely, freeze them in an airtight container, then bake them for 5 to 10 minutes at 180 \u00b0C without thawing them first.<\/li>\n<\/ul>\n<p class=\"wp-block-paragraph\">And if you just prepare them in the morning for the evening, store them at room temperature in a container and reheat them for five to seven minutes at 180 \u00b0C before serving\u2014that will make them crispy again.<\/p>\n<h2 id=\"h-what-should-you-serve-gougeres-with\" class=\"wp-block-heading\">What should you serve goug\u00e8res with?<\/h2>\n<p class=\"wp-block-paragraph\" id=\"h-a-l-aperitif\"><strong>As an appetizer<\/strong>: This is how I serve them most often:<\/p>\n<p class=\"wp-block-paragraph\" id=\"h-\"><strong>During a meal: <\/strong> You can also serve them as a side dish with your meals<\/p>\n<h2 id=\"h-frequently-asked-questions-about-gougeres\" class=\"wp-block-heading\">Frequently Asked Questions About Goug\u00e8res<\/h2>\n<div class=\"schema-faq wp-block-yoast-faq-block\">\n<div class=\"schema-faq-section\" id=\"faq-question-1787762668951\"><strong class=\"schema-faq-question\">Where do goug\u00e8res come from?<\/strong> <\/p>\n<p class=\"schema-faq-answer\">As a Burgundian specialty, the Goug\u00e8res recipe can be traced back to the 18th century in the Tonnerre and Chablis regions. During that time they were served in wine cellars during wine tastings because the richness of the cheese softens the acidity of white wine. <\/p>\n<\/p><\/div>\n<div class=\"schema-faq-section\" id=\"faq-question-1787762701377\"><strong class=\"schema-faq-question\">What\u2019s the difference between a goug\u00e8re and a chou?<\/strong> <\/p>\n<p class=\"schema-faq-answer\">The base is exactly the same\u2014it\u2019s choux pastry. A goug\u00e8re is a savory version of choux pastry with cheese added.
