data-start=\"4934\" data-end=\"4989\">This is probably the most important part of the recipe.<\/p>\n<p data-start=\"4991\" data-end=\"5024\">Do not cut the pumpkin too small.<\/p>\n<p data-start=\"5026\" data-end=\"5063\">Chunks around 1 1\/2 inches work well.<\/p>\n<p data-start=\"5065\" data-end=\"5153\">They soften enough to become creamy inside but are still big enough to survive stirring.<\/p>\n<p data-start=\"5155\" data-end=\"5207\">Also, once the pumpkin is tender, be gentle with it.<\/p>\n<p data-start=\"5209\" data-end=\"5339\">Aggressive stirring will break everything apart and turn your lovely chunky curry into pumpkin soup with chickpeas floating in it.<\/p>\n<p data-start=\"5341\" data-end=\"5354\">Not the plan.<\/p>\n<h2 data-section-id=\"1vc6gq1\" data-start=\"5396\" data-end=\"5473\">Pumpkin has natural sweetness, so a creamy coconut base suits it beautifully.<\/p>\n<p data-start=\"5475\" data-end=\"5574\">The cumin, curry powder, turmeric, and coriander keep the sauce savoury and warm rather than sweet.<\/p>\n<p data-start=\"5576\" data-end=\"5635\">Then the chickpeas add a nuttier flavour and a firmer bite.<\/p>\n<p data-start=\"5637\" data-end=\"5671\">It all balances surprisingly well.<\/p>\n<p data-start=\"5673\" data-end=\"5754\">I use full-fat coconut milk because the sauce comes out much richer and smoother.<\/p>\n<p data-start=\"5756\" data-end=\"5812\">Light coconut milk works, but the curry will be thinner.<\/p>\n<p data-start=\"5814\" data-end=\"5896\">If that is what you have, just simmer it uncovered for a rice lets the curry do all the talking and gives the sauce somewhere useful to go.<\/p>\n<p data-start=\"6069\" data-end=\"6098\">You could also serve it with:<\/p>\n<ul data-start=\"6100\" data-end=\"6215\">\n<li data-section-id=\"1lc0y50\" data-start=\"6100\" data-end=\"6114\">Basmati rice<\/li>\n<li data-section-id=\"ecc00j\" data-start=\"6116\" data-end=\"6128\">Brown rice<\/li>\n<li data-section-id=\"h86as8\" data-start=\"6130\" data-end=\"6142\">Naan bread<\/li>\n<li data-section-id=\"1eie0sn\" data-start=\"6144\" data-end=\"6155\">Flatbread<\/li>\n<li data-section-id=\"78v7dx\" data-start=\"6157\" data-end=\"6165\">Quinoa<\/li>\n<li data-section-id=\"uwl7ur\" data-start=\"6167\" data-end=\"6215\">Cauliflower rice if you want something lighter<\/li>\n<\/ul>\n<p data-start=\"6217\" data-end=\"6292\">If there is naan involved, I am absolutely using it to wipe the bowl clean.<\/p>\n<p data-start=\"6294\" data-end=\"6313\">Cutlery has limits.<\/p>\n<h2 data-end=\"6568\">Peas<\/li>\n<\/ul>\n<p data-start=\"6570\" data-end=\"6672\">Just remember that adding lots of extras changes the cooking time and may require a little more stock.<\/p>\n<h3 the fridge for up to <strong data-start=\"6940\" data-end=\"6950\">4 days<\/strong>.<\/p>\n<p data-start=\"6953\" data-end=\"7043\">The sauce thickens as it sits, so add a splash of water or vegetable stock when reheating.<\/p>\n<p data-start=\"7045\" data-end=\"7090\">Warm it gently on the stove until piping hot.<\/p>\n<p data-start=\"7092\" data-end=\"7135\">You can also microwave individual portions.<\/p>\n<p data-start=\"7137\" data-end=\"7219\">I usually store the rice separately so it does not absorb all the sauce overnight.<\/p>\n<h2 data-section-id=\"1hryy43\" data-start=\"7221\"
