This is the first Mother\u2019s Day I\u2019ll spend without my mom here on\u00a0earth. We lost her 6 months ago.<\/p>\n

\u00a0<\/p>\n

The most accurate description\u00a0of grief I\u2019ve come across is this: Grief is love \u2013 with nowhere to go<\/em>.<\/p>\n

\u00a0<\/p>\n

And here I am, still filled to the brim with love for her. Talking about her and honoring her are the ways I keep that love going.<\/p>\n

I wanted to do something special in remembrance of her here on Cheap Recipe Blog. After all, she was the #1 supporter of my blog (and all of my creative endeavors), continually encouraging me, sharing my recipes with her Facebook friends, buying me food photo props she would find at thrift shops, and being the historical reference for some of the old family recipes I\u2019ve shared on here.<\/p>\n

She was my biggest cheerleader<\/strong><\/em>.<\/p>\n

And I would give anything to make her one more meal.<\/p>\n

If I had that opportunity, I would ask her what she wanted the meal to be \u2013 absolutely anything \u2013 and I would make it for her. I\u2019m almost certain she would request a really good corn chowder<\/strong>. (Second only to a good clam chowder \u201cwithout potato chunks\u201d or Norwegian potato dumplings<\/a>).<\/p>\n

But before we dive into the recipe for cheesy corn and bacon chowder, I want to tell you a little bit more about my mom.<\/p>\n

The first thing I\u2019d like to say about my mom Violet \u2013 the trait that really sums her up the best, from the perspective of her daughter \u2013 is that she just loved being a mom<\/em><\/strong>. Her life revolved around loving her three kids.<\/p>\n

Growing up, she would sew us parade and Halloween costumes. Later in life, she started sewing costumes for my cat for a pet Halloween photo contest. She would throw us elaborate birthday parties that were highly anticipated among our friend groups.<\/span><\/p>\n

Just a couple of years ago, she decided to start a \u201cSurprise of the Month\u201d club for me and my brothers, where she would send a fun surprise in the mail every month (a little gift, a lottery ticket, a gift card) \u2013 just for the fun of it. It was as fun for her to send it as it was for us to receive it.<\/p>\n

Creativity<\/h2>\n

My mom was creative to the core. Throughout her life she was into painting, sewing, arts and crafts. She wrote weekly stories for our local newspaper for 20+ years. There was no ordinary with her. Everything she touched \u2013 everything she did \u2013 displayed the creativity God abundantly blessed her with.<\/span><\/p>\n

Fun \u2013 All Of The Time<\/h2>\n

My mom loved having fun. That sounds so simple \u2013 so common \u2013 but for her it wasn\u2019t occasional. It was all the time. She was always up for a golf cart ride around our small hometown, always game to check out a new coffee shop or restaurant, always plotting some little prank. She went on road trips just because. She laughed easily and often. She had this gift for making an ordinary Tuesday fun and interesting. I think some people wait for life to get fun. My mom made every day fun.<\/p>\n

My Prayer Warrior<\/h2>\n

The degree to which growing up with loving parents and grandparents has benefited me is not lost on me. And I often wonder how much the prayers of my mom and grandma, in particular, have affected my life.<\/p>\n

My mom was my prayer warrior. I\u2019ve dealt with some bigger challenges in life and I could always count on my mom to not only pray for me, but to tap her greater friend circle to also pray for me.<\/p>\n

And you know what? Despite the tougher challenges I\u2019ve faced in life, things have always worked out for the good. I give glory to God for that. But I also believe that He heard every one of my mom\u2019s prayers.<\/p>\n

The Gift Of Noticing<\/h2>\n

One of the things I admired most about my mom was the way she noticed people. Not the loudest person in the room \u2013 the quietest. The kid getting left out. The person nobody else thought to include. She had a radar for the overlooked, and when she found them, she made them feel seen.<\/p>\n

I think this gift came from her own childhood. She was picked on as a kid, and rather than letting that make her hard, she let it make her kind. To the core. She took that pain and turned it into a superpower.<\/p>\n

What I Miss The Most<\/h2>\n

If I\u2019m being honest, what I miss most aren\u2019t the big things. It\u2019s the moments when something happens \u2013 good, bad, frustrating, funny \u2013 and my first instinct is still to call her. Because she always got me. She understood how I thought, what I needed to hear, and when to just listen. She just made everything better.<\/p>\n

There are so many conversations I still want to have with her.\u00a0<\/p>\n

So here is what I can do<\/strong>. I can make her favorite food, on the day we set aside to honor moms, and I can think about her the whole time. And I can share her with you, in this special little way.<\/p>\n

This cheesy corn and bacon chowder isn\u2019t her recipe \u2014 she didn\u2019t leave me this one. It\u2019s mine, made in her honor, because corn chowder was her favorite thing to eat and this is the closest I can get to sitting across the table from her again.<\/p>\n

About The Recipe: Cheesy Corn And Bacon Chowder<\/h2>\n

If you like corn chowder, you\u2019re going to love this particular recipe because I cut no corners<\/b> in making it the most delicious corn chowder ever \u2013 in honor of my mom.<\/p>\n

This cheesy corn and bacon chowder is many things:<\/p>\n

Why You\u2019ll Love This Chowder<\/h2>\n

  • Super creamy<\/strong> \u2013 We\u2019re adding creamed corn to this soup as well as cream cheese and heavy cream, making it velvety smooth<\/li>\n
  • Bacon-heavy<\/strong> \u2013 I cooked up a whole pound of bacon, extra crispy. To keep the bacon crispy, I opted to mix it in right before serving. I also reserved some bacon crumbles for the topping.<\/li>\n
  • Heavy on flavor<\/strong> \u2013\u00a0 Not gonna lie, soups are my specialty. I make a pot of soup, taste it, add more flavor agents, taste it again, and tweak until it\u2019s just perfect. This soup is no exception. I\u2019ve tweaked it to my liking \u2013 and you can certainly tweak it to yours, too.<\/li>\n
  • The not-so secret ingredient<\/strong> \u2013 I always add a couple teaspoons of apple cider vinegar to a pot of soup. It just wakes up the flavor. Trust me on this one!<\/li>\n<\/ul>\n<\/div>\n<\/div>\n

    • Better Than Bouillon chicken base (in lieu of chicken broth)<\/li>\n

      • Cut bacon into bite-sized pieces and cook until very crispy<\/li>\n
      • Set bacon aside<\/li>\n
      • Cook onions, carrots, and celery in bacon grease and butter<\/li>\n
      • Add frozen corn, cream style corn, chicken broth, cream, cream cheese, apple cider vinegar, garlic powder & sugar<\/li>\n
      • Simmer; add cheese before serving and top with more cheese, bacon bits, and green onions to serve<\/li>\n<\/ul>\n
