Here\u2019s how to do it:<\/p>\n<p class=\"wp-block-paragraph\"><strong>Step 1: Boil. <\/strong>Add potatoes to a large pot with enough salted water to cover them. Do not cover the pot. Boil over high heat until they\u2019re soft enough to easily prick with a fork, about 15 minutes.\u00a0<\/p>\n<p class=\"wp-block-paragraph\"><strong>Step 2: Strain &amp; Chill.<\/strong> Strain the potatoes but DO NOT rinse. The starch on the surface is important for getting our mayo-mustard dressing to stick. Spread potatoes in a single layer on a shallow pan to allow them to cool off. Once the potatoes are cool, cover the pan with foil and put in the fridge for about 4 hours or overnight to completely chill.
