It’s a quick, easy ground beef dinner you sneak into the rotation the second you’re sick of the same old thing and craving something different. Sweet raisins, briny olives, sharp capers, all swimming in a rich tomato sauce. One bite and it’s obvious why people keep coming back to it, and it turns out to be one of the best meal prep recipes in this whole batch, since the flavors only get better after a night in the freezer.

We tested this specifically for the GC Freezer Meal System, where vegetables, proteins, and starches are portioned separately and mixed together for quick dinners later. Cooking wine works, but it is usually saltier. Taste the picadillo before adding more salt at the end.

Can I make this without olives?

Yes. Leave out the olives if you don’t like them. Add a little extra caper brine after reheating if the picadillo needs more brightness.

Do I need to thaw the picadillo before reheating?

No, it reheats well from frozen on the stovetop or in the microwave. Thawing overnight gives a smoother texture for larger portions, but it isn’t required for 1-cup or smaller portions.

Can I skip the raisins?

Yes. Leaving out the raisins gives you a more savory version with less sweetness. Everything else about the freezer prep stays the same.

Freezer Meals Series · Protein It wasn’t until we actually made picadillo for the first time that we understood why it’s a staple in so many kitchens.
