It\u2019s a little sweet, a lil boozy, and just spicy enough to pop. It\u2019s the kind of dish that is a total takeout fakeout and vanishes every time we make it.  What we didn\u2019t expect when we started testing it for four Lego lunches is that it would hold up this well from frozen. Better than most proteins we\u2019ve tried, actually. We tested cornstarch, and the sauce came out of the freezer watery and a little grainy. Tapioca keeps the sauce glossy and smooth through the freeze-thaw cycle in a way cornstarch just doesn\u2019t. The other thing that matters: don\u2019t cook the sauce all the way down to thick. Leave it a little looser than you\u2019d want for a fresh serving. It firms back up during reheating, and if it goes in too thick, it turns sticky in the mold and pulls apart when you try to serve it.<\/p>\n<p class=\"wp-block-paragraph\">We tested this specifically for the <strong><a class=\"tasty-link\" rel=\"noopener\" target=\"_blank\" data-tasty-links-no-disclosure=\"\" href=\"https:\/\/girlcarnivore.com\/freezer-meals\/\">GC Freezer Meal System<\/a><\/strong>, where proteins, starches, and vegetables are portioned separately and mixed together for quick dinners later. Wet chicken steams. This step matters.<\/li>\n<li>Heat 1 tablespoon oil in a large skillet over medium-high heat. Add half the chicken in a single layer. Cool at room temperature for 20 to 30 minutes, then refrigerate until completely cold before portioning.
