{"id":7035911,"date":"2026-08-10T00:28:20","date_gmt":"2026-08-10T00:28:20","guid":{"rendered":"https:\/\/peraltafinancing.com\/recipes\/category-a-b\/bread\/curry-roasted-potatoes-and-asparagus\/"},"modified":"2026-08-10T00:28:20","modified_gmt":"2026-08-10T00:28:20","slug":"curry-roasted-potatoes-and-asparagus","status":"publish","type":"post","link":"https:\/\/fivemor.com\/?p=7035911","title":{"rendered":"Curry Roasted Potatoes and Asparagus"},"content":{"rendered":"<p> <br \/>\n<\/p>\n<div id=\"post-body-5137174075392045653\">\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEgdZ5sdfSVFSFmKJ527-rkRy-6Xb9rpccuau7eCKjHq_cjDqrcJlpUfT23IkbcrqZTvtI7d5gEOrNwFs85XCF-Yxxd9jjpsA9Rpc6R98sC9oX8gR4PRr8phWqys1QLSQcNNhkiJLkySg-KbBsmIfr_5hHaLvW3n7TF-LDK01u0dXnsrb5gkPx-rP3rCbcA\/s4080\/PXL_20260807_022140255.jpg\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"3072\" data-original-width=\"4080\" height=\"364\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEgdZ5sdfSVFSFmKJ527-rkRy-6Xb9rpccuau7eCKjHq_cjDqrcJlpUfT23IkbcrqZTvtI7d5gEOrNwFs85XCF-Yxxd9jjpsA9Rpc6R98sC9oX8gR4PRr8phWqys1QLSQcNNhkiJLkySg-KbBsmIfr_5hHaLvW3n7TF-LDK01u0dXnsrb5gkPx-rP3rCbcA\/w483-h364\/PXL_20260807_022140255.jpg\" width=\"483\"\/><\/a><\/div>\n<p style=\"text-align: justify;\">Today we are exploring different ways to serve fresh veggies.\u00a0 We&#8217;re kind of past asparagus season in the garden though my folks still have a few spears coming up, but you can still get supermarket asparagus most of the time.\u00a0 It&#8217;s darn hot out this week and there was no way I was turning on the oven to make these, so I roasted them on the barbecue!\u00a0 Now we got a Traeger when our old gas grill died, so I am still getting used to it.\u00a0 Pellet grills don&#8217;t get screaming hot like gas grills do.\u00a0 But that also means you can more easily bake in them, which I will be doing this weekend.\u00a0 But this recipe is a definite winner.\u00a0 How do I know?\u00a0 Because after hubby loaded up a bowl-full and disappeared, he reappeared a minute later with a serious look on his face and the bowl held out almost accusingly.\u00a0 <i>&#8220;WINNER,&#8221;\u00a0<\/i>\u00a0he unequivocally stated;\u00a0<i>&#8220;Big <strike>Bleep<\/strike>ing winner&#8230; you can make this any time you want to.&#8221;<\/i><\/p>\n<p style=\"text-align: justify;\">So, there you go.\u00a0 And now I know I will take roasted asparagus over sauteed, every day of the week.\u00a0 Wow, so good and tender.<\/p>\n<p><i><span style=\"font-size: large;\">Curry Roasted Potatoes and Asparagus<\/span><\/i>\u00a0<\/p>\n<p>4 large yellow potatoes cut into 1-inch chunks, ~ 4 cups<br \/>1 pound fresh asparagus, ends trimmed and cut into 2-inch pieces<br \/>3-4 tbsp avocado oil<br \/>\u00be tsp sea salt<br \/>1 tsp freshly ground black pepper<br \/>1\u00bd tsp yellow curry powder (<i>Vadouvan French curry powder is fantastic<\/i>)<br \/>1 tsp granulated garlic<br \/>\u00be tsp paprika (sweet or smoked, <i>or both<\/i>)<br \/>pinch of cayenne<br \/>4-6 tbsp shredded Parmesan cheese<\/p>\n<p>Preheat the oven to 375\u00baF.\u00a0 Line a half sheet pan with parchment paper.\u00a0 Combine the salt and spices in a small dish.
