That tart crust though\u2026 wow. Buttery and crispy, with superior crispy staying power (days I tell you, days!!!), almond cream and loads of raspberries, it is just everything!<\/p>\n<\/blockquote><\/div>\n<div class=\"nagis-notes__quote-attribution\">\n\t\t\t<img decoding=\"async\" loading=\"lazy\" alt=\"\" src=\"https:\/\/www.recipetineats.com\/content\/themes\/once-coupled-recipe-tin-eats\/assets\/images\/svg\/signature.svg\"\/>\n\t\t<\/div>\n<\/p><\/div>\n<\/p><\/div>\n<h2 id=\"h-raspberry-tartlets\" class=\"wp-block-heading\">Raspberry Tartlets<\/h2>\n<p class=\"wp-block-paragraph\">If you\u2019ve ever wandered into a French p\u00e2tisserie here in Australia, chances are you\u2019ve spotted neat rows of beautiful raspberry tartlets in the display cabinet. We call them\u00a0<em>Tartelettes aux Framboises<\/em>, and they are very popular. I completely understand why \u2013 with crisp buttery pastry, rich almond cream and bright, juicy raspberries, they are simply irresistible.<\/p>\n<p class=\"wp-block-paragraph\">Interestingly though, they are not nearly as common in France. For us French, this is really a raspberry version of one of our great p\u00e2tisserie classics,\u00a0<em>Tarte Bourdaloue<\/em> (<a href=\"https:\/\/www.recipetineats.com\/pistachio-pear-tart\/\" type=\"post\" id=\"61212\">Pear Tart<\/a>, made here with pistachio). Made with poached pears nestled into almond cream (frangipane), it is a tart you will find in bakeries all across France, all year round. It\u2019s used in many classic French desserts, including\u00a0Tarte Bourdaloue\u00a0and\u00a0Galette des Rois, one of the most famous and beloved cakes for French people.<\/p>\n<p class=\"wp-block-paragraph\">In French p\u00e2tisserie, it is called a\u00a0\u201ctant pour tant\u201d recipe, literally\u00a0<em>\u201cequal parts\u201d<\/em>. It bakes into a damp, cake-like filling with a wonderfully rich almond flavour that pairs beautifully with tart raspberries.<\/p>\n<p class=\"wp-block-paragraph\">For this recipe, I chose to make individual tartlets rather than one large tart because they\u2019re elegant to serve and perfect for entertaining. Even better, most of the work can be done in advance. The tart shells can be baked a day or two ahead, the almond cream can be made and refrigerated, and the raspberries prepared just before assembling. Their tartness balances the rich almond cream beautifully. Choose firm, plump berries if possible. Different berries can be used, like blueberries, cherries or strawberries. I don\u2019t recommend using frozen raspberries. For more information, see the FAQ.<\/p>\n<\/li>\n<li>\n<p><strong>Unsalted butter<\/strong>\u00a0<strong>\u2013<\/strong> Make sure it\u2019s properly softened to room temperature so it creams smoothly with the sugar.<\/p>\n<\/li>\n<li>\n<p><strong>Caster sugar \/ superfine sugar<\/strong>\u00a0<strong>\u2013<\/strong> Dissolves more easily than regular sugar, giving the almond cream a smooth texture. But it is ok to use regular \/ granulated sugar.<\/p>\n<\/li>\n<li>\n<p><strong>Eggs<\/strong>\u00a0<strong>\u2013<\/strong> Use\u00a0<a href=\"https:\/\/www.recipetineats.com\/eggs-used-for-baking-temperature-and-size\/\" type=\"post\" id=\"49342\">large eggs<\/a> (50 \u2013 55g \/ 2 oz each, shell-on weight)\u00a0at room temperature so they incorporate more easily into the butter mixture.<\/p>\n<\/li>\n<li>\n<p><strong>Almond meal \/ ground almonds<\/strong>\u00a0<strong>\u2013<\/strong> Finely ground blanched almonds are the key ingredient in almond cream, giving it its signature nutty flavour. This is easy to do at home simply with warmed apricot jam loosened with a little water. Alternatives to raspberries \u2013<\/strong> Raspberries are my favourite because their tartness balances the rich almond cream beautifully, but you can use other berries too. I don\u2019t recommend using frozen berries \u2013 see FAQ. Blueberries and cherries work wonderfully, or swap in halved or quartered strawberries depending on their size. You can even use a mix of berries if you like.<\/span><br \/>\n<span style=\"display: block;\"><strong>3. Beating in the eggs one by one<\/strong> helps them emulsify properly into the butter mixture, creating a smooth, stable almond cream. If you add them all at once, the mixture is more likely to split or become lumpy.<\/span><br \/>\n<span style=\"display: block;\"><strong>4. Making ahead \u2013 <\/strong>If you make the almond cream ahead, make sure to remove it from the fridge about 1 hour before using so it has time to come back to room temperature and soften, making it easier to spread into the tart shells. You may also need to bake the tartlets 5 minutes longer, go by the colour, they\u2019re ready when the almond cream is puffed and lightly golden.<\/span><br \/>\n<span style=\"display: block;\"><strong>Leftovers and storage \u2013 <\/strong>These raspberry tartlets are at their best on the day they\u2019re made, when the pastry is at its crispest. Leftovers keep well in an airtight container in the fridge for up to 3 days. Serve at room temperature, or warm briefly in the oven. He puts his whole heart into every shoot, determined to become the best little recipe assistant he can be.<\/p>\n<p class=\"wp-block-paragraph\">This time, he couldn\u2019t resist standing up and resting his paws on the shooting table to check how filming was going.
