But add Boursin cheese, and you may not wait that long. The garlic and herb cheese melts into the hot Yukon Golds with warm butter and whole milk, and the whole thing is so fast and so rich that it feels like a cheat code. These work as an easy fresh side, so testing them for freezer meal prep was equal parts skeptical and excited. Mashed potatoes and the freezer have a complicated history. Most come out watery or gluey. The extra steam-dry step, letting the drained potatoes sit in the hot pot for a few minutes before mashing, pulls out the water that would otherwise turn to ice crystals. The fat from the Boursin and the whole milk acts as a buffer through the freeze-thaw cycle in a way that skim milk or water just can\u2019t. Russets work in a pinch, but the texture gets looser after thawing.<\/li>\n<li><strong>Unsalted butter<\/strong><\/li>\n<li><strong>Whole milk:<\/strong> Use whole milk, not 2% or skim. The fat matters here the same way it does in the butter. Low-fat milk produces a thinner, icier freeze.<\/li>\n<li><strong>Boursin Garlic and Fine Herbs:<\/strong> One package. This is doing double duty as both seasoning and fat. It melts completely into the hot potatoes. Bring to a boil over high heat, then reduce to medium. Cook for 15 to 20 minutes, or until the potatoes give zero resistance when pierced with a fork and start to break at the edges.<\/li>\n<li><strong>Drain the potatoes, then put them back in the hot pot.<\/strong> Let them sit uncovered for 2 to 3 minutes. You\u2019ll see the steam rising. This is the most important step for freezer-friendly mash.<\/li>\n<li>While the potatoes steam dry, warm the butter and whole milk together in a small saucepan over low heat for 3 to 4 minutes until the butter melts. Don\u2019t let the milk boil.<\/li>\n<li>Mash the potatoes until mostly smooth. Add the warm butter mixture, Boursin, salt, and pepper. Fold together until creamy and combined. <strong>Look for:<\/strong> a slightly thicker consistency than a fresh-serving mash. If they look too thick, add a small splash of whole milk, not the potato cooking water.<\/li>\n<li>Taste and adjust salt before portioning. Freezing mutes the seasoning slightly, so make sure it\u2019s well-seasoned going in.<\/li>\n<li>Spread the mashed potatoes in a shallow container and cool at room temperature for 20 minutes.
