margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"4080\" data-original-width=\"3072\" height=\"540\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEgaGqIyiGKejNl_EkeIJrFge7tqLic2NidYwLMNRIzOV7m5msFKGVferfmyxhewo-Feuwzcn6YemWghTnR8grRzXQZ73aAcjV0O9Yi2TPgHlXx0z3ORGdoMu84ccImeT7Y-zI7j_yJUxFCO6mOxqt4TgdDtViGVGpjDQ5SlkdtRROGGrvqEfCECY3W9KbM\/w407-h540\/PXL_20260610_180619127.jpg\" width=\"407\"\/><\/a><\/p>\n<p style=\"text-align: justify;\">For this Sunday Funday, we celebrate the upcoming Canada Day on July 1st.\u00a0 \u00a0I can think of a number of dishes\/flavors that personify the Great White North, maple syrup being one, poutine being another, and then those famous bars from the City of Nanaimo.\u00a0 We are just a few hours from the border, and our local grocery store bakeries always have these bars in stock.\u00a0 Quite sweet, they last a long time held in the fridge for me when hubby decides to treat me.\u00a0 The city has the recipe available on their website and I have wanted to try them out for years.\u00a0 I believe the bakeries use desiccated coconut, (unsweetened), and in the interest of not making these even sweeter than they tend to be, that&#8217;s what I used.\u00a0 The base is what tempers the sweetness of the custard\/buttercream filling.\u00a0 I did make sure to get real custard powder and not use pudding mix.\u00a0 They are not the same and it won&#8217;t taste quite the same though it&#8217;s a common enough substitution.\u00a0 It used to be a difficult item to find, but I see it all the time now, just as with golden syrup.<\/p>\n<p style=\"text-align: justify;\">The base is fairly crumbly when mixed but presses together nicely.\u00a0 And since there is more base than the frosting-like filling, these are sweet, but not overwhelming in small squares.\u00a0 These homemade ones are much more balanced and less sweet than the grocery store versions, especially since I prefer to use salted butter.\u00a0 Not difficult to make and very much worth it!<\/p>\n<div class=\"separator\" style=\"clear: both; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"3072\" data-original-width=\"4080\" height=\"301\" src=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEiztAWPLZQT7tee60Qt9O0U7v05zmhmVZJVx46EYSYJmyQ_l05dzBKU96iBNVhybaHZ6Uk_d_qEtbMuDbcRCFHkBxP42gNHQL0uWhsGSR57uqNpxQvzQW5MMHOpzKCUUTlZc7BBichYSJXlP03Ap2Lm2h_Qe7eSLn1cdwLYC7DUBzETNnTA12ngnTm_6-k\/w400-h301\/PXL_20260610_180909078.jpg\" width=\"400\"\/><\/a><\/div>\n<p style=\"text-align: justify;\">The store bought variety has a perfectly smooth surface, a thinner ganache topping than this one, but also a cloyingly sweet filling.\u00a0 I very much preferred this homemade version!\u00a0<\/p>\n<p style=\"text-align: justify;\"><i>* Although the original recipe calls for unsalted butter throughout, I fervently disagree.\u00a0 These bars NEED the salt to enhance the flavor and temper the sweetness, so add pinches of salt to the base and the filling if using unsalted butter!\u00a0<\/i><\/p>\n<p style=\"text-align: justify;\"><i><span style=\"font-size: large;\">Nanaimo Bar Recipe<\/span><\/i><br \/><span style=\"font-size: x-small;\">from the <a href=\"https:\/\/www.nanaimo.ca\/about-nanaimo\/nanaimo-bars\" target=\"_blank\">City of Nanaimo<\/a><br \/>makes 25 squares<\/span><\/p>\n<p>Base Layer<br \/>\u00bd cup butter (European style cultured) (113g)<br \/>\u00bc cup sugar (50g)<br \/>5 tbsp cocoa (26g)<br \/>1 egg beaten<br \/>1\u00be cups graham wafer crumbs (175g) <i>I used 125g grahams and 50g pretzels and loved the result<\/i><br \/>\u00bd cup finely chopped almonds (50g)<br \/>1 cup shredded coconut (unsweetened) (53g)<\/p>\n<p>Filling Layer<br \/>\u00bd cup salted butter (113g)<br \/>2 tbsp and 2 tsp cream (40 ml)<br \/>2 tbsp vanilla custard powder (30 ml) <i>I only had plain custard powder available locally so I added vanilla<\/i><br \/>2 cups icing sugar (225g)<\/p>\n<p>Topping Layer<br \/>4 squares semi-sweet chocolate (4 oz)<br \/>2 tbsp butter (28g)<\/p>\n<p>Gently melt together the butter, sugar, and cocoa in the top of double boiler.\u00a0 Add the beaten egg and stir until the mixture has thickened.\u00a0<i> (Make sure the mixture is not hot enough to scramble the egg.)\u00a0<\/i> Remove from heat. Stir in the cracker crumbs, coconut, and\u00a0nuts. Press firmly into an ungreased 8-inch square pan.\u00a0 (Line with parchment if desired for easier removal.)\u00a0 Chill while making the filling.<\/p>\n<p>Cream together the butter, cream, custard powder, and icing sugar until well combined.\u00a0\u00a0Beat until light. Spread evenly over the bottom layer with an offset spatula.\u00a0 Chill for 30 minutes or until set and not sticky.<\/p>\n<p>Melt the chocolate and butter together over low heat. Cool to <u><i>room temperature<\/i><\/u>.
