Prep the Vegetables<span class=\"ez-toc-section-end\"\/><\/h3>\n<p data-start=\"3332\" data-end=\"3547\">Peel the potatoes, swede and carrots. If the vegetables are in good condition, you may not need to peel them \u2013 I haven\u2019t peeled the potatoes in the pictures. Slice them thinly \u2014 about 3mm if you can. The thinner the slices, the more evenly they cook. A sharp knife works perfectly well, but if you have a mandoline, this is its moment.<\/p>\n<p data-start=\"3332\" data-end=\"3547\">Crush the garlic \u2013 be generous with it.<\/p>\n<h3 data-start=\"3332\" data-end=\"3547\"><span class=\"ez-toc-section\" id=\"2_Cook_the_Vegetables\"\/>2. Cook the Vegetables<span class=\"ez-toc-section-end\"\/><\/h3>\n<p>To keep the cost of the fuel to a minimum, I experimented and found that there is no need to cook it for an hour and a half in an oven. Pile all the vegetables and the garlic into a microwavable dish with a lid, or put a plate on top, season and cook on full power for 5 minutes. Test with the point of a knife to see if they are tender. If not, give them another minute.<\/p>\n<h3 data-start=\"3549\" data-end=\"3572\"><span class=\"ez-toc-section\" id=\"2_Get_Everything_in_the_Dish\"\/>2. Get Everything in the Dish<span class=\"ez-toc-section-end\"\/><\/h3>\n<p data-start=\"3574\" data-end=\"3607\">Lightly grease an ovenproof dish.<\/p>\n<p data-start=\"3777\" data-end=\"3851\">Pile the cooked vegetables into the dish.<\/p>\n<h3 data-start=\"3853\" data-end=\"3873\"><span class=\"ez-toc-section\" id=\"3_Add_the_Cream\"\/>3. Add the Cream<span class=\"ez-toc-section-end\"\/><\/h3>\n<p data-start=\"3875\" data-end=\"4031\">Warm the cream gently in a small pan (don\u2019t boil it). Add the garlic and season well. Pour the garlicky cream slowly over the vegetables. It should just about reach the top layer but not drown it.<\/p>\n<p data-start=\"3875\" data-end=\"4031\">I like to sprinkle one of my favourite ingredients over the top \u2013 Aleppo pepper. It looks pretty and gives a little spicy warmth. Black pepper does just as good a job.<\/p>\n<h3 data-start=\"4091\" data-end=\"4115\"><span class=\"ez-toc-section\" id=\"4_Bake_Low_and_Slow\"\/>4. Bake Low and Slow<span class=\"ez-toc-section-end\"\/><\/h3>\n<p data-start=\"4117\" data-end=\"4261\">If you cannot cook your vegetables in a microwave and they are still raw, cover with foil and bake in a moderate oven for about 60 minutes 170<strong class=\"Yjhzub\" data-processed=\"true\">\u00b0<\/strong>C \/ \u00a0340\u00b0F<span class=\"Yjhzub\" data-processed=\"true\"> \/ <\/span>Gas Mark 3, or 150\u00b0C for a fan oven. Then remove the foil and bake for another 20\u201330 minutes until golden and bubbling.<\/p>\n<p data-start=\"4117\" data-end=\"4261\">If your vegetables have been pre-cooked in the microwave, this time can be reduced hugely. Bake at 170\u00b0C (fan) for about 20 minutes.<\/p>\n<p data-start=\"4263\" data-end=\"4366\">You\u2019ll know it\u2019s ready when a knife slides easily through the centre and the top is beautifully golden.<\/p>\n<p data-start=\"4263\" data-end=\"4366\">Let it sit for 10\u201315 minutes before serving. This helps it firm up and makes slicing easier.<\/p>\n<h3 data-start=\"4263\" data-end=\"4366\"><span class=\"ez-toc-section\" id=\"How_to_cook_Daphinoise_in_an_Air-Fryer\"\/>How to cook Daphinoise in an Air-Fryer<span class=\"ez-toc-section-end\"\/><\/h3>\n<p data-start=\"4263\" data-end=\"4366\">Air fry at 160C \u2013 180\u2218C for 30-40 minutes, covering with foil initially if needed.
