He spent years honing his palate in the restaurant world. This \u201cflavor-first\u201d perspective would later define the Noordt philosophy \u2013 creating beers that are balanced, technical, and designed to pair perfectly with food. Peter was one of the early pioneers in the Netherlands to bridge the gap between brewing and sommelier-level expertise, which led to him founding the first accredited brewing course in The Netherlands together with Lentiz and Stibon. Even in his early career, Rouwen was known for his collaborative spirit.
